You 100% can. However, during the mock battle, they ended up hitting a rule called "Overkill." This happens when your damage is equal to or more than their remaining and max health in one hit.
An example: A guard with a max hp of 11 gets down to 1 health.
A PC does 12 points of damage to this guard. That downs them because he only had one health, so 11 damage is remaining. The remaining damage is 11, which is equal to their MAX health, which results in an instant death.
This rule technically applies to PCs as well, but usually doesn't happen because the way encounters are balanced.
