Lots of sushi restaurants feel that everything, from the menu to their decor is proprietary and don't want competitors "copying" their "style." So it's not so much not wanting you to copy their menu which is probably on Yelp as well but they don't like anyone photographing anything that is detailed or "artistic." Trust me. I know lots of native Japanese who come to the US and shutter click away and owners of establishments have come to resent it. I also know Japanese businessmen that have gone back to Japan and actually replicated lots of ingenious ideas from establishments they saw and just from pictures, no one can say that anything they mimicked had a copyright on it. I even worked at a school where visiting educators took pictures of English text books and worksheets then went back to Japan and ordered curriculum off of the Internet saying, "If they are using these materials to teach in America, it must be what we need to use to be effective."

They probably didn’t want you to show the menu cause prices of fish changes so if the price goes up the price of fish has gone up and they don’t want to guarantee those prices will be the same to customers who see this.
Beef tataki sushi. Thin layers of rare fired beef that has been presoaked in a light mirin soy or ponzu sauce. Really delicious. Great for cleansing the palate of too much fish, crab, abalone, clam, squid, octopus type of sushi. Beef sushi adds a real boost to the flavors during your feast.

Joel, I have worked at a Japanese hibachi and sushi restaurant for 10 years now. I watch them make sushi all the time. Where I work (in CT, USA) the spicy rolls that you mentioned when you said is like cat food is actually real meat, the scrape it off of the fish with a spoon to make it that texture. Im sure some places are different. I just wanted you to know if you are at a good sushi place, they use real fish.

I went to Mizu with my partner, the Dartmouth one. It was good! I ate everything that wasn't sushi, we were both so full! The plates are so small, we ordered soo many! It was tasty!
White tuna = escolar = ono which is a lot fattier and oilier then some other fish which is why some people have issues with it. It’s my personal favorite! 💕💕💕

Not sure if you have ever tried this. But if you fill up your soy sauce holder and take your Wasabi and mix enough to your liking with the soy sauce, you can get the Wasabi flavor not as strong as it by itself but blend with soy sauce. It enhance the sushi flavor in every bite. That all looks delicious. In LA we're still in lockdown so no indoor dining for a while now.
@@JoelHansen you don't use the whole batch of Wasabi. Lol. Just enough to your liking. I never liked fish, then i met someone who lived in Japan for like 10 years and introduced me to sushi. Unfortunately in LA it's expensive so it's not something I can enjoy often. But she told me about the mix. It just adds more flavor to every dip into the soy sauce and for me i can't handle to spicy. So i use about the same amount you were putting on different bites during the video for about 2 or 3 pieces and mixed it in soy instead. You'll have to experiment to find the mix you enjoy best.
