Steadicam is usually smoother but you need at least a year of experience and practice whereas with the gimbal a day of practice doing a ninja walk is enough.
Also cost is a huge factor. As a cheaper solution the gimbel is just unbeatable. Still most productions don't have a the budget for a steady cam op (compared by numbers). Steady cam is probably for the upper 10% and with good reason.
By no means I've ever operated steadicam but when I hear from ppl who experienced steadicam such as arri artemis/trinity, requires more physical capabilities over gimbals.
Love my ol ronin s with the compact a7siii autofocus for lower budget production and corporate work. It's such a quick, easy and effective tool for me. Never had too much fun using big cinema cameras on movi, ronin etc like you guys said. So much better having dedicated stedi op on set...must have a decent budget for it though!

You guys should do a learn cinematography section on build or creating a steadicam rig and picking out a rig for use

Ive seen homeboys steady cam no way thats easier to set up than a DJI
