Two four inch pans is NOT the same as one eight inch one! Eight inch would be way too big and the cake would end up much thinner. Area doesn't scale like addition.
True! I’ve made it in an 8 inch cake pan in two other ovens and each took between 5-8 mins less per cake! Not the same area, but makes a great single layer orange cake 😄 They’re not too thin/crispy and still have good moisture and height (if that makes sense)! That’s why recommend it’s cooked until slightly browned on top- because no two ovens are the same!
