Ingredients:
2 tbsp(14g) cardamom
1 tbsp(5g) all spice
1/2 tbsp(5g) black pepper
1/2 tbsp(3g) cloves
2 ceylon cinnamon sticks
a whole star anise
a whole vanilla beans
30g ginger
20g black tea leaves
300g cane sugar
600ml water
Instructions:
1. Gently crush the spices
2. Toast them over low heat for about 30-60 seconds
3. Add ginger, water, and sweetener, and simmer for about 20 minutes
4. Add the black tea leaves, remove from heat, and let steep for about 3 minutes

オールスパイス 大さじ1
生姜 30g
紅茶 20g
バニラ 適量
砂糖 300g
水 600ml
「作り方」
1、スパイスを少しすり潰します。
2、弱火で30~60秒ほど炒ります
3、生姜、水、砂糖を加えて20分ほど煮ます
4、紅茶葉を加えて火を止め、3分ほど蒸らします

Hi, huge fan of your videos since years now. I have one quick question , a while ago you were shooting on gfx100 and moved back to sony. can you explain the reason?
I’ll be making it this week, do you know how long this could last for? And does it need to be refrigerated?
Interesting variations on the Masala chai, Ryoya san. I’ve never had vanilla in my masala chai. Will try. The usual thing is to have saffron, but if that’s too boring then I might have instinctively tried chamomile instead of vanilla.
Two other surprises were the use of allspice and star anise. Personally, I’d not have used star anise as cinnamon is already in use.
The one thing I’d have definitely changed is replace long leaf black tea with fresh CTC from Assam or Nilgiri. It has more body and would go well with spices. Long-leaf gets overwhelmed by the spices.

If you buy your spices at ethnic stores they are a LOT more affordable. They come in large bags, sometimes at less than the cost of a small jar of the same spice from a supermarket.
How long can you store it for in those tiny jars?
