Kevin. OMG! This is SO GOOD! I have been cooking my whole life and I'm an old guy. This is really really good. It puts ANY of those freeze dried meals to shame...even the really good ones. I modified slightly, I used cannelloni white beans and black beans instead of lentils. I used one red pepper and one green pepper. I added a few good splashes of Worcestershire sauce. Great for increasing flavor depth. I also added salt. With all the potatoes, if your stock is not salted, it needs it. I like to add white pepper too. It has a different kind of zing to it. And a few good splashes of good old traditional Tabasco. I dried some shrimp separately and added those t the dry mix at the end. I doubled your recipe. 125 g makes a VERY healthy serving. I usually eat a lot outdoors but I think this may be pushing it. Next time I'll try 100-110 g. I think next time I make this I will do a very quick sauté on the peppers and dry those separately. Although it's delicious, the chowder has very little color aside from the corn.. I think putting the peppers in the dry mix will add a punch of color and let that flavor stand out a little. Your lasagna recipe has been fantastically good as well. I'm experimenting now with cutting the sheets of dried ingredients to 4x4" squares and assembling it in layers just like fresh lasagna. I will have to find some way to support the layers because the vacuum sealer CRUSHES the food inside. (A good technical challenge!) BTW- I got a Weston commercial vacuum sealer and it is incredibly good. Not only keeps the food fresh for years but compacts the volume so it takes up less space in a pack (far less space than the commercial freeze dried meals.) A tip for those of you vacuum-sealing lasagna noodles or pasta. The sharp edges, especially when the noodles break when vacuum sealing, will pierce the bag and you'll lose the seal. Put the food into a freezer Ziploc bag first. Leave the zipper OPEN. Then put the Ziploc into your vacuum seal bag and proceed as usual. The extra layer of plastic will prevent the piercing. The beauty part of this is that anytime I make a family meal, whether it be a stew, lasagna, shepherds pie, stir fry, chili.....I double up the recipe....(which is really not that much more effort) and dry everything that's left over! I also package up some of the fresh food in vacuum sealed bags and throw them in the freezer. Anyone can take a leftover out at anytime and throw it in a pot of water or the microwave for a quick homemade dinner or lunch. No more "having to eat" the leftovers within two days. I'm looking forward to your book. Thanks again for getting me started with this!

Glad this one appeals to you. Most of the meals I do are easy to convert to vegan, and my vegan meals are easily converted for the omnivores out there. This is one of those vegan meals that doesn't seem to be missing anything.

I like how when u pull the prep bowls away, there is always 1 tiny pice of veggie left behind on the cutting board that u have to go back for. I get to depend on it. I would feel incomplete if there wasn’t a pice left behind 😌
Great thing about this recipe is if you don't want to be vegetarian you can add a Spam singles packet (well if your in the USA) or chicken packet for added protein and calories. Can't wait to try it!

When it comes to spices in a dish that I will be dehydrating I usually use 1.5 times the amount of the recipe. You lose a lot of flavour in dehydrating.

@@tompodsiadlo8268 Good question Tom. I can't really speculate on Ontario Parks, it seems that closures and restrictions are only being announced a month or so in length. But I will say this, my observation right now is everyone is hoping that things will return to normal in a month or two. Some people are thinking that perhaps we can all return to camping in the Fall. Unfortunately I believe this situation will last a lot longer. When I listen to the top medical officers in Canada and the U.S. and from the W.H.O. it sounds like we won't return to 'normal' until a vaccine is developed and made available, and that is at least a year away. After this first wave is over I think we will have to re-assess what is possible. I presume some functions in society will become more normal as more and more of the population develops some resistance to the virus and as we learn what is still possible with social distancing. But still the most vulnerable people will need to remain isolated until there is a vaccine. Honestly, think we are looking at 12-18 months before public places (parks, arenas, etc.) open. I hope I am wrong!

Yes 3-4 portions is about right. When I package these meals I apportion them based on dry weight. 125-150g dry is the range for most people camping. Good luck Elizabeth!

It all depends on how well you dehydrate the meal and how well you store it. If kept airtight and away from heat it will easily last 6 months, but likely a lot longer. I have had many meals last years.
Great looking meal. I have pretty much given up dehydrating corn tho. It dehydrates well but i cant get it to rehydrate beyond rock pebble consistency. Any thoughts
Thanks Keith. Good question. You might be over-drying it. I find it works best to remove vegetables from the dehydrator as soon as they are dry. Also, ensure you are drying veggies at a lower temperature 57C or 135F. If you dehydrate at too high a temp they can dry too quickly. Let me know if either works out for you.

Hey Kevin! Thanks for putting all of these recipes online! Could one use chicken broth if maintaining the vegetarian status wasn't critical? How would that change dehydrating the meal?
Kevin can you use canned coconut milk in place of the powdered? I don't have easy access to powdered. Don't really want to order on line. I figured I can add the milk during the cooking and it will have a thicker broth when I dehydrate it. Thoughts?
Yes you can, but it won't dehydrate as well. I used to use canned coconut milk before the powder form came to my grocery store. Coconut milk is fatty so it doesn't dehydrate and your dehydrated meal will be a bit greasy. The dehydrated meal with coconut milk won't be as shelf stable. Or as you suggest, just add it when you do the cooking. Good luck!
I usually bring a pot that is 1L. Many ultralight backpackers use a smaller pot but I like to have room to stir without being ultra careful. It also makes for a cleaner campsite.
Great Video! What size pot are you using to cook these 150ish gram meals? What do you think is the smallest pot size you could get away with? Have you tried rehydrating it into a bag instead?
That is a really good question. Lots of people try and get the smallest pot possible. I find that a 900ml pot is about as small as I want to go. Remember the pot not only has to hold the meal but also be large enough to allow some stirring. I do not rehydrate my meals in plastic bags, I hate the taste and don't want to deal with a wet bag.
@@KevinOutdoors Cool! I Use a 850ml pot. I bought some 4 mil thick resealable vacuum bags from OutofAir that I'm going to try to cook in with a coozie. If that doesn't work I'll probably cook in the pot. Thanks for the recipes!
Don't understand why people drain the canned beans"that is all lost flavor, that is what they taste like,not to mention the nutrients are now thrown out and all that's left is the dence product. Can you explain that to me please?I would love to know why,it drives me crazy to watch a small few whom prepares as such .that you for recipe loved it.
Hi Yvette, Most of the cloudy liquid in a can of beans is starch and salt. It is perfectly edible but it can also take on the flavour of the can itself. I think some people can taste it and some can't, but I certainly do. Rinsing the beans also removes a lot of the sodium.
You should turn into a dehydrated cookery channel! Love all your passed meals.

That green shoot in the garlic is the thing that causes reflux
Interesting, I didn't know that. Chefs remove it because of a bitter taste but I don't really notice it.

Yes I have, barley dehydrates just fine.
Thanks, the chowder is great, didn't have canned lentils so went with 1 cup dry and upped the water to 1.7 litres (basically a full kettle).

HI Paul, I would use a cup of red lentils. They cook in about 20 min. Nothing in my recipes is exact. 😀

Dry powders aren't measured in mililiters, they are measured in miligrams. The rest of the world knows that😂😂😂
Often, but the back of the package indicates volume so that is what I used.
