Rice Burger with Spam, Egg and Kimchi

  • Rice Burger with Spam, Egg and Kimchi
    I always have leftover rice. Most of the time, I forget that it’s hanging out in the rice cooker and it turns into a dry, crispy mess.
    In a concerted effort to not waste food, I pulled together some random ingredients from the fridge for this easy breakfast style burger.
    Simple and delicious. Make it your own.
    Ingredients:
    1 cup of leftover cooked rice
    2 thin slices of Spam
    1 room temperature egg
    Kimchi
    2" x 6" strip of nori
    Directions:
    1. Using plastic wrap, gather and pack the rice into a dense mass. Press and flatten the rice to ~1 cm thickness. Cut out 3” rice patties. Set aside.
    2. Fry the Spam slices until brown and crispy on both sides. Set aside.
    3. Fry one room temperature egg to your preferred doneness. Set aside.
    4. Slightly crisp both sides of the prepared rice patties.
    5. Assemble the rice burger. Lay down the strip of nori. Place a rice patty on one edge, layer on the Spam, egg and kimchi. Finish with the other rice patty. Fold the nori over the top rice patty. Enjoy!
    Notes:
    The nori is optional. It’s for extra flavor and also makes the rice burger easier to handle.
    No Spam? No problem. Use what you have in the fridge; ham, bacon and pork belly are good substitutes.

      you can use peanut butter container bcs it's circular

      +Trueblue777 I use short grain rice (sushi rice). If you pack the rice into dense patties it won't fall apart. 🙂

    Looks fantastic, but I always see how in many of this "rice burger" recipes they obvious the rice part. Like, just use freshly steamed rice but... what's the actual recipe or way to properly cook rice for this buns? (for us that do not have a rice steam/cook machine) (eg. does it require rice vinegar, salt, something?)

    dumb question can i use any rice for a pattie or is it llike a special type?

      Short grain (sushi) rice works best. :)

      I also would say short grain cause ive tried using jasmine to make musubi and it just doesnt stick well at all

      Yup, just playing with different shapes so didn't think it was appropriate to call it musubi.
