Kulfi Mousse Cake Recipe:

Step 1 - Homemade Kulfi Mixture:
Full fat milk - 1 1/4 cup
Powdered Sugar - 1/2 cup
Fresh Cream - 1/3 cup
Cardamom Pods - 2
Kesar - one pinch
Khoya - 2 Tbsp
Cornflour - 1 Tbsp

Step 2 - White Chocolate Ganache
White Compound - 200 gms
Fresh Cream - 100 gms

Step 3 - Kulfi Mousse
Fold in white chocolate ganache in around 2 cups of whipped cream. Then add half of the cooled down homemade kulfi mixture in it and mix well with the spatula.

Step 4: Assembling
For assembling, we will need a vanilla sponge, recipe for which I'm providing the following:
Vanilla Sponge Recipe:
Milk - 1/4 cup
Curd - 1/4 cup
Melted Butter - 3 Tbsp
Powdered Sugar - 6 Tbsp
Vanilla Essence - 1/2 Tsp
All Purpose Flour - 1/2 cup + 2 Tbsp
Cornflour - 1 Tbsp
Baking Powder - 1/2 Tsp
Baking Soda - 1/4 Tsp
Salt - a tiny pinch

Bake in a square mould 7 inch in a preheated oven for 20-25 mins at 180 degrees celsius.

Now to assemble the dessert take a plate and set the square ring mould in the centre and then place the cake in it. Then soak the cake with leftover homemade kulfi mixture. Then spread the kulfi mousse that we just made and tap well. Level nice till the top and freeze it for 2-3 hours or overnight.

Step 5 : White Chocolate Shell:
White Compound - 150 gms
Refined Oil - 1 Tbsp
Chopped nuts of choice - 2 Tbsp

Melt everything together. Demould the kulfi mousse and add this nutty white chocolate from the top and spread well. Then let it set for a while. Your delish kulfi mousse cake is now ready to devour.
