When Charles Lindbergh flew across the Atlantic, he had to use a periscope to see ahead. The Boom test jet used a CCTV to land. In the Boom concept video of the full-scale passenger jet, there were no pilot cockpit windows, it was fully enclosed.

Designed 60 years after Concord and flying at a significantly lower speed, with fewer passengers. Doesn't seem to be much of an advance for passenger transport, more a toy for a few billionaires. Of course, that's assuming that it will ever be built.

Why is the landing gear down in every video?

Because that was flight one where the plane was tested gear down to assure a safe landing and handling characteristics when it's down.
Flight two saw a successful retraction of the gear and from here on it will be retracted every time.

This test plane, the XB-1, doesn't use the same engines as, or look anything like, the proposed aircraft, so what are they really testing?

The company should have chosen a better company name. Boom can be taken as the noise a plane makes breaking the sound barrier or the noise a plane makes when it crashes.
