      Flat iron comes from the shoulder, this is a chuck which actually comes from the neck connected to the shoulder, chuck consist of chuck eye steaks, Denver, and the chuck itself for roast.

    You vids are great - just found them. Watched your ribeye one before this one. I went carnivore late last year and prices climbing so I will be cutting larger cuts and your vids are great. Can you recommend the type, size, and brand of knife as I will need to buy one.

      I use victorynox the size is up to you. The bigger the cut the bigger the knife generally. I use a 10 inch for most of my cuts. But something like ball tips I would use a 6 inch

    Love these videos of less common cyrovacs. How about a cyrovac lifter next?
