  • Maple Breakfast Cake Recipe - Old Cookbook Show
    Today we delve into a little culinary history from the maple sugar shacks of Ontario. Breakfast Cake? I guess that's a thing - Even if you don't eat this cake for breakfast, it's a solid maple cake recipe.
    Sift together
    1 ½ cups sifted pastry flour
    ½ cup whole wheat flour
    4 teaspoons baking powder
    1 teaspoon salt
    ¼ teaspoon cinnamon
    1/8 teaspoon nutmeg
    Combine
    1 egg, beaten
    ⅔ cup maple syrup
    ⅔ cup milk
    1 ½ teaspoons melted butter
    Add to dry ingredients. Turn into a greased 9-inch pan and sprinkle top with cinnamon and maple sugar. Bake 35 minutes at 400º.

      I did see your cake for one videos. Personally, I prefer to make a whole batch of muffins or a full cake and share with loved ones and friends. Still, if you have only yourself or you and one other person to feed, then smaller cake recipes are great.😊

    Chicken is the cat!! I giggled when I heard your wife said, "Chicken!" I heard you say the name in another show and wondered if you had a chicken in your garage kitchen sometime back and had no idea it was a cat! LOL! Sounds like a great recipe too.

    Tried this recipe using honey as a substitute for the maple syrup. Used regular flour as a substitute for pastry flour. Also added a dash of vanilla (just because). Other than those changes, followed the recipe (except for the maple sugar, though in retrospect, brown sugar might have been a good substitute in that instance). Results are nice! Not awesome, but very good for a breakfast. Thanks for your videos. I've learned a lot.

      @@winstondave Thanks for the comment. The vibe of this channel is to use many of the recipes as a starting point. That was a great eye-opener for me. I'm making this recipe (from which the starting point was this video) again today (added 1/2 cup flax - reducing the white flour accordingly - and added dried blueberries. Brown sugar sprinkled on top before going into the oven. We'll see. Confident it will be fine - which is a new place for me to be after two years of watching this channel. Cheers.

    So glad you liked the cookbook, Glen. I had a feeling you would! I didn't copy the recipes before sending the book your way, but will try this one with Nova Scotia maple syrup & sugar. I hope you have a chance to make more recipes from the book to use up some of your maple syrup😂. And a flavour tip, if any baked recipe isn't 'mapley' enough for your taste, just add 1 tsp of maple extract - helps to accentuate the maple flavour.

    Where I am, in Australia, maple syrup is 10 dollars Australian, per cup. 250 ml. Expensive stuff. I keep a bottle in the fridge, but only in very small quantities, on pancakes or crepes. I love it for those special occasions. 🙂

      I was thinking that instead of sprinkling cinnamon and maple sugar on top, maybe making a maple glaze for after the cake comes out of the oven-- not sure how to create that since adding confectioners sugar to maple syrup seems like it would be way way too sweet.

    I've got an old pumpkin bread recipe I make a few times a year. Couple years ago, after mixing all the dry ingredients, I realized I was out of eggs. But I had applesauce - which is a vegan egg substitute for baking. So I thought, what the hell, and replaced the egg and the pumpkin with applesauce - I'm sure I didn't invent apple bread, but it was new to me - and really good.

    Hey, Glen. Just wanted to share how my riff on the cake went this evening. I followed the recipe, with a few tweaks based on what I have in the pantry: I substituted potato flakes (butter flavor, almost grabbed the garlic&herb!) for the whole wheat flour, substituted molasses for the maple syrup (50/50 blackstrap and regular), added a couple packs of raisins leftover from my son's school lunch supplies, and used a rounded 1/8 tsp. each of mace, cloves and ginger instead of the nutmeg.
    Baked at 400 Fahrenheit for 25 minutes in a 9 inch pan.
    Served warm (well... Hot actually, I didn't have the will power to wait) with a scoop of vanilla ice cream on top.
    It had an interesting texture, more chewy than crumbly, probably because of the potato. It didn't rise as much, maybe half as thick, and I was surprised it only took 25 minutes.
    Overall, I was well pleased with it, though next time I might go with lighter molasses, or even sorghum, but I tend to really enjoy blackstrap. Cheers!

    My inlaw just sent us a mason jar of theirs home made maple syrup! Am I loved, Yes. Am I going to burn 2/3 cups of it on a cake.... no.

      I was worried you'd use most of it in a cake so am very glad to hear you won't do that. It needs to be eaten in a way that makes it the star element that can be savored. Wish my in-laws would do something like that!

    If I were using honey I'd probably dilute it with water a bit, given it's thicker as Julie points out, and it's got a bit more sugar in it than maple syrup. So maybe 1/2 cup or a little more of honey, and make up the rest with water.
    Or maybe in lieu of maple, substitute banana saccharum, that would be brilliant.

      I'd never heard of banana saccharum, so I just googled. This cake would be a great fit for that. Thank you! I will try - with organic bananas. A note about bananas - most are grown with a lot of pesticides which most people don't worry about bc it all ends up in the peels.

    I so enjoy your show, especially the old Sunday morning recipes. You remind me of the old Frugal Gourmet show (meant to be a compliment) before his scandal. The relatable, easy way you have with Julie then standing in as the Craig at the end... I love everything about it and never mind recommending you to others as there's NOTHING controversial, something always interesting and just an all around enjoyable viewing. One thing I'd love to see added to the rotation - a cook-off with another chef using the same recipe of the old cookbooks and have Julie judge at the end... it would be interesting to see how much one's own experience effect the guessing game that sometimes come with these recipes.

    The best cotton candy I’ve ever had was made with maple sugar. It was a very light tan color, and I could smell the maple when I opened the bag.

    I like how they write the recipe with "Sift together" and "Combine" printed up with the ingredients. It's kind of clearer than most recipes that put "sift together dry ingredients" and "combine wet ingredients" in their instructions.

    I was curious if a date could be found. I searched for the cookbook, and the top result is an entry on eBay (bidding has ended). The seller listed the publication date as 1976, without mention of the edition number. Other search all had later dates, with at least one mentioning it was the 7th Edition printed in 1987. I did it just to satisfy my own curiosity, and comment on it here just to tell you, Glen, how spot on your guess seems to be.
    I also enjoyed how even though the cake didn't turn out quite the way you were expecting, it seemed you were eager enough for another bite, and that seems good enough endorsement as anything else you said about it. It sure did look good after baking.

    Chicken is amazingly well behaved for a cat. All we're seeing is ears and part of her head while she stands on your box- most cats would be climbing you to get a better look or just jumping on the counter.

    4tsps of baking powder is probably responsible for the aeration. That seems like a higher than normal ratio for the amount of flour. Now if only I was rich enough to buy maple syrup lol.

      I raised my eyebrows at the amount of maple syrup he added, and then couldn't believe my eyes when I saw him sprinkle maple sugar on as a cake topping. That stuff is like gold (even though it's local to me). Perhaps I will seek out Glen's videos on making his own maple sugar. That might be the way to economize a bit.

    Glen got to cook with his homemade maple syrup and homemade maple sugar. I don't think his feet were touching the floor once the cake came out of the oven. Just love how excited he gets over good simple food.

    I like that it doesn't use a lot of oil or fat. I think that's what makes it "breakfast cake." That & also because it has no frosting.

    Maple syrup and soy sauce (with other spices and flavorings, e.g. grated or minced ginger) makes for a good glaze. But I have never used it with hot dogs.

    They just ate a piece of naked maple breakfast cake. Poor Glen, Poor Julie. As a Michigander, where Ontario is our southern neighbor, we know that the way to eat maple breakfast cake is to cut a wedge, then cut that wedge horizontally then spread butter and maple syrup on each piece THEN and only then is it eaten.(with or without additional maple sugar sprinkled on). Think maple pancake or maple waffle. At least that's the way the maple grower's association booklet from the Michigan State Fair circa 1970 said to do it. Respectfully, W.S.

    You could easily leave off the cinnamon and maple sugar topping and either frost it or dust powdered sugar over the top to serve it as a dessert. Definitely going to make this but will need to use all gluten free flour.

      Yeah, I'd say this is special occasion cake, more than friends just dropped in cake, unless you actually own a sugar bush. 😀

    I'd love to know their maple chicken recipe. Mine just adds maple, rosemary, oil, salt & pepper to the chicken & then bake til done.

    I went on a cocktail-making kick a couple months ago and bought a huge ~2kg tub of demerara sugar. I wonder how this would turn out using a 2:1 demerara syrup instead of maple.

    Add some apple, dried fruit (banana etc) and I could certainly see that as a breakfast cake. Our could it be eaten with some bacon in a similar way to pancakes? Overall it's a bit like a muffin.

    Hi Glen, I wonder if I want to reduce the amount of maple syrup to avoid having too much sweet, do I need to add certain amount of water or milk? Thanks!
