Harvesting Agave Espadin for Mezcal Production in Oaxaca, Mexico

Mezcal Reviews visited the Pacheco family palenque in Ejutla, Oaxaca, Mexico and watched their team harvest an agave Espadin piña (heart) for mezcal production. The Pancheco family works with the brand Mezcal Marca Negra and mezcal produced in their remote palenque (distillery) can be found worldwide. As you can see, this is not easy work. agave pencas (leaves) are very sturdy and Pedro's blade is incredibly sharp. This agave Espadin piña weighed in at 120 kilos (264 pounds) and was taken back to the palenque in a truck.
The entire process to of creating a batch of traditional mezcal can take up to one month, whereas large industrial tequila (which is most tequila) is made in less than a day.

Esos agaves tienen por lo menos 10 años por que no están podados y fijate que piña peso 70 kilos por lo menos
