They began by auditioning 10, 000 Japanese speaking girls and selecting 26 of them to compete in Tokyo. Fourteen of those girls were selected to go to Korea where they competed for 6 months to select the 9 girls who would become NiziU. If you've seen Sixteen, the show that created Twice, then you'll know how JYP operate in his search for talent, and he's very good at it.
I remember starting the series a while ago, but I never got around to finishing even the first season! I think it would be a good one to explore on Patreon for sure

The singer you liked is "Nina" she is the only mixed American-Japanese member and she is the youngest she just turned 16yo in Feb, she lived in the US most of her life so she knows perfect english but has lived in Japan the past three or four years and is fluent in Japanese. The first rapper is Rima her mother is a model in Japan and her father is a famous rapper in Japan she is the second most fluent in english. The second rapper is Mayuka, the trainers have consistently praised her for her kind and respectful nature. Their leader is the eldest Mako who is probably the most disciplined and hardest working of them all, they have a very infectious personality like Twice and all though they have primarily been only promoting in Japan I hope they expand soon, they have a lot of talent and potential.
