How to bake a large loaf of TRUE French Bread in a Bread Machine

  • I have owned and baked in dozens of bread machines. Contrary to what you would think , French Bread is one of the more difficult breads to bake and have it come out full sized. French bread in bread machines often comes out small and dense and leaves bread machine owners disappointed and frustrated because French Bread ingredients are simple and basic so you expect it to turn out well. If you look at the recipe book for your bread machine it will probably say in the French Bread recipe that you should add some oil. But, if you want true French Bread with a good crust and chewy texture you don't want to put oil in your recipe. Many French bread recipes in the bread machine recipe books come out almost exactly like standard white bread if you use oil or butter in the recipe. You don't have to accept that. Compare my recipe to the one in your book and you will see that mine is very different. Try my recipe in your bread machine. I recommend you bake in a 2.0 capacity bread machine if possible. Certainly if you use this recipe use a machine that will at least bake a 1.5 pound loaf and lower the yeast to 1.5 teaspoons instead of 2 teaspoons and check on the loaf near the end of the last rise and before the bake cycle. If the loaf is so big that you think it might touch the lid of your machine run a wooden shish kabob skewer down the middle of the dough and it will shrink enough so that it won't touch the lid. Do this BEFORE your machine begins baking if you have a 1.5 pound capacity machine.
    If you have a 2.0 capacity machine, don't worry your machine will be big enough for my recipe. Don't forget the lemon juice and 2 tablespoons of sugar....very important.
