I was so astounded with how Claire just handled and tasted those potatoes mid-cooking while they were so obviously hot and then she just says she has no feelings in her hands! These are definitely must-try recipes, as a potato person myself!
I make a similar dish to the potato pancake based off of the Arab dessert kunafe. The potatoes are shredded instead of mashed and there’s a layer of cheese (feta, mozzarella, Gruyère, pick your poison!) in between. I usually top it with crushed pistachios so it looks just like a kunafe!
Claire is first of all not frosty Martha Stewart. She is direct in her communication about what and why. She is immediately likable and charming ,in her own way: no gush. She talks about how her mother did things, with respect and love, in a nostalgic way, very winning - it is about Thanksgiving. And new ways to think about something new, that honors the past and its favorite the potato. I look forward to seeing more of Claire. Thank you to her @NYT StephenKMackSD
Your savory NYT videos are fantastic and we need more of them! A few years ago you did a recipe for charred cabbage which has since become my favorite veggie side dish!
Sometimes I close my eyes and imagine Claire is my sister and I drop by her house while she is cooking something yummy. Then she asks me to taste what she is cooking and asks for my thoughts. Even though we are imaginary sisters, I cannot explain the food taste as well as her, but still love to help her by tasting 😂
She had a really excellent series called “Gourmet Makes” that’s still on RUclips. The premise is that she would try and make classic snack foods, like jelly brand or Doritos, from scratch. It’s worth looking into if you enjoy her content !
I could see cooking at least two of your recipes for a special occasion, so as to have plenty of amazing sides to have as leftovers. Everyone can easily fend for themselves for the next few meals, & you recover from the cooking marathon. Also, crispy & creamy potato goodness… enough said. Thanks Claire.
All of these dishes look amazing! Claire is coming in hot with the potato recipes But can we all talk about the cold chunk of butter she ate with a potato skin? Lol Love you Claire! Your recipes are delicious and your videos are so informative!
I make my mom’s potatoes for the holidays. Cheesy Potatoes Palillo (turmeric) 2 tsp Potatoes 4-6 medium size Monterey jack cheese 1 cup or more One can really use any cheese that will melt Cut peeled potatoes into small cubes. Place in a large pot, cover potatoes using enough water to just cover the potatoes. Sprinkle a bit of salt over the potatoes. Boil for about 10-15 minutes until desired creaminess. Stir the potatoes several times as they cook, Most of the water should be evaporated when done. If there seems to be to much water after 15 minutes, just scoop out some of the water. Another five minute should do it. Stir in turmeric and cheese off the heat. Start with 1 tsp of turmeric. Add just enough to get the potatoes a nice yellow color. 1 cup is the recommended amount of cheese but add more to make it cheese. 2 cups is the limit. This dish is about the potatoes. It’s not a cheese dish. Use a stainless steels pot. Remember, if one uses a dutch oven the pot stays hot and will continue to evaporate the water.
Everyone should take a look at the comments on the NYT article version of this…. the difference in tones and opinions to those here is incredible. I’ve never seen ppl be so passionate ab stuffing and mashed potatoes lol
this is the first BA-related content i've watched since everything happened bc this triggered my nostalgia for their big thanksgiving episode that i loved so much 😢 rainbow plant life also uses a ricer for mashed potatoes!! maybe i should invest in one lol
00:59 that is kinda one of my favourite bites of food too actually, we have turkey every New Years here and the meat with potatoes, gravy and for me this red currant jelly, is the best combo from that dinner for sure
The third dish reminded me of the Korean snack gamcha-jeon , although the batter for gamcha-jeon would start out with raw potato rather than cooked potato I think.
I used to watch this girl and that curly hair dude a few years ago. Used to be fun, they had an energy. Now they are just like everyone else, gone and almost forgotten
Should I say what some of us are thinking? I miss Claire doing "Gourmet Makes". She did some crazy stuff on that show and managed to overcome some gnarly challenges that seemed to force her to go far beyond her culinary wheelhouse. I dont miss seeing her on day three barely clinging to hope and sanity though. Lol. That being said, I absolutely love seeing her kick butt and make amazing food. When it comes down to it, I see Clarie or Sohla or Priya.... I click! And I'm totally going to make those twice baked!!! Freaking drooling.
I don't like the possibility of getting a chunk of garlic clove with a bite of that potato cake. I would mince, shave or remove the garlic before adding the potatoes.
Happy Thanksgiving! Thank you for having me on the channel!
Everytime Claire tastes the finished dish I just instinctively go 'MMM'
🙏🇺🇸
I also identify as a potato person, this video is definitely for me. Those sides all look so yummy!
I always love when Claire's versatility is showcased.
I have completely stopped Bon Appetit vids for obvious reasons but seeing this made my day!!!
Double dose of Claire today!
triple if you registered for her Patreon!

Claire and potatoes in one video?!?! This is what dreams are made of

I’m definitely making those twice baked potatoes

Love you Claire! Your recipes are delicious and your videos are so informative!
I missed that butter part and had to go back! 😆 but I'm assuming (hoping) it melted before she ate it
In our household we are a potato > bread carb household and these are all going to be cooked immediately.
Love Claire and savory offerings!
Happy Book release day to Claire!! Love all the potato recipes!! Will def try that Duchess one and add some cheese LOL
Let's be Claire, she's the best.

Claire got me through lockdown and now Thanksgiving - Thanks Claire ❤️ missing Brad in the background 😂
this is the first BA-related content i've watched since everything happened bc this triggered my nostalgia for their big thanksgiving episode that i loved so much 😢 rainbow plant life also uses a ricer for mashed potatoes!! maybe i should invest in one lol
This was great. Claire is a legend
Ohhh the egg yolks for richness makes sense to me now
00:59 that is kinda one of my favourite bites of food too actually, we have turkey every New Years here and the meat with potatoes, gravy and for me this red currant jelly, is the best combo from that dinner for sure
Claire is the best ❤
i love u Claaaaiiiiiirrreeeeeeee!!!!!! u the best !
What is that pink pan with the gold handle that she used for the Garlicky Mashed Potato Cake?
Looks like it might be a GreenPan.
I'm the potato person in the family. It's the only thing I know about how to make a different potato side dish.
Happy Thanksgiving to you Claire! You are a wonderful teacher! Yummy recipes! 🤗💞🤗
These all look so good 😭 might try one of them. I love scalloped potatoes, might give the first one a try
Making all of these ! Yum
I was wondering where Claire went after she left BA. Glad to see her again!
This made me so hungry
I was waiting some home food from Claire, thanks guys!
Love this!!
How do you keep the yolks from scrambling when you add them to the hot potatoes?
Yolks don’t really scramble. It’s the whites that do.
Triple yum, I love Claire
NYT cooking coming out with the heat
Asbestos hands OMG Clair!
Tip for using a mandolin: use a guard. Also, love these recipes!
I love the twice baked potato recipe, I do it with mayonnaise instead of raw egg yolks :)
More savory Claire content!!
I love Claire, i miss her recreating treats on Bon Appetit.
Wow, new comfort food yes,😍🥰🤗🤤🤤🤤🤤🤤🤤
I love potatoes and will definitely try these. Thanksgiving, however, has mashed potatoes with gravy! I make great gravy.
The third dish reminded me of the Korean snack gamcha-jeon , although the batter for gamcha-jeon would start out with raw potato rather than cooked potato I think.
Fabulous and fun video. But what was the pretty, white non-stck pan Claire was using for the potato cake?
Love Claire!!! 🥳🥳
Claire!!!!!!
Looks very yummy 🤤
Ah, Claire is the sister I never had! 'No such thing as too much garlic' and I knew we were separated at birth! LOL
Potato person 😄😄
utterly charming
Omg I missed you
Potato down! Potato down!
Fan from Bon Apetit
“I just think they’re neat!”
A suite? I thought you were glad not to be making dessert 😂
How about a triptych?
Fabulous video ❤
I used to watch this girl and that curly hair dude a few years ago. Used to be fun, they had an energy. Now they are just like everyone else, gone and almost forgotten

Can't wait to make these. More Claire videos!
NGL I miss Claire's old series, but I'm glad she's here
these all look so fucking good
Claire is the heir... To Julia and Ina... IMO
👍
Add cream cheese into twice baked potatoes, it makes them more tasty, more piquant.
I’m too pick the crispiest bits

Add a couple of sausages to the Pommes Boulangere for a one-dish.
I don't like the possibility of getting a chunk of garlic clove with a bite of that potato cake. I would mince, shave or remove the garlic before adding the potatoes.
the no feeling in my hands bit was a throwback to BA Thanksgiving episode... if you know, you know. rip
Claire, you beautiful genius
Claire raw-dogging those potatoes again.
Bagels you did bagels
