At my old job they would clean it in and drain it in to a pot and then we would take it outside and fill a barrel up with it. And some company or something would come get it. I never seen them do. Long story short my job lost so many pots. I think we was cleaning our deep fryer wrong for years lol

I used to work in a kitchen that had oil cleanliness problems our solution was basically to empty the machine once every day and put the oil into a Food grade oil drum outside that would be taken away at a later date and then clean the fryer when empty with Blue Tissue but this option seems a lot more economical
Man this would've been great on board US Navy vessels. To fill the fryer in the beginning the can's of shorting would be put into kettles of boiling water to melt. After afew there you could use a bench knife to punch a pouring hole and a air hole to fill fryer. After using that's wear it got difficult with the rocking of the ship. If to dirty to reuse, we or I would put into the empty can's and let cool and hardened. Then toss over the side when we dumped trash at sea. Needed to add the hazardous part if shorting was still usable, Cool oil would be drain in 6 inch steamtable pans the pour thur a fine calendar to remove the big stuff, then pour back into fryer for next use.

I’ve worked around many Different types of fryers. More recently the Fryers at our Local Safe Way grocery stores usually have a gas powered Fryer that drops the oil into a bottom Filter pan, the oil drops down and there is a metal Grate that catches most crumbs and other things caught in the fryer. And just by hooking up the hose to the fryer you can do the same process as here. Where you filter/ polish and clean the fryer simultaneously. Even Churches chicken and Wingstop have the same type of fryer where this process is built into the fryers. This Filter method is great ofc for fryers that do Not have this built in.
I have also been seeing a new method. One where there are 2 tanks in the facility, one has a hose that sucks the old oil up, and the other shoots out clean oil. The older oil gets sucked into a huge tank that Filters the oil right there and the other tank is full of the clean/filtered oil. The whole process is done right there
I remember when I worked at burger king they had a machine like this and all the employees use to complain about cleaning the fryers when it was time to clean them I would always volunteer to do it cause it was weirdly fascinating to me lol
This is pretty much exactly the process chick fil a used when I worked there. Their fryers had a spot to attach the hose though and the filter machine was part of the fryer. To add to that we changed the oil very seldom(once a month or even 2 months) despite fried food being about the only thing on the menu. The key to that is the lockout system they had. Wouldn’t let you cook if you don’t run the filter every 5 cooks
Chick-fil-A and some other similar restaurants have a very high absorption rate and they keep adding oil infest don’t need to change it very often. However there hasn’t been a single time that I have eaten a Chick-fil-A sandwich where the chicken is not very greasy. I think if they had a filtration system similar to ours that they would get much better results

The oil filter machine takes out the burned particles the degrade the oil irreversibly. The flavor should be in the food and in the seasoning, not in the greasy burned debris inside the oil.
It’s a possibility but I don’t recommend it because it may put a lot of strain on the motor and pump. You could try it one time and see. But if you need deeper Filtration than 10 µm we can give you a 1 µm filter

No you are probably correct. There’s many fryers that have built-in push button oil filtration. They are called in line Fryers. Unfortunately they are not microscopic filtration systems and will remove the big bread crumbs that you can see by eye but will not double life for the cooking oil.

That Red thermal-jacket sleeve he is using is made of a Silicone outer cover, but that inside of that sleeve is unprotected fiberglass. That fiberglass is releasing glass particles into the air and into the oil. Do not use that product around any food or food equipment.

I disagree with you sir. The oil degrades irreversibly if the frying debris sits there frying day after day. Work from the top and get all of those crums THEN sides and bottom. Going to the top in the middle only makes you have to repeat more of the process.

I disagree with you sir. The oil degrades irreversibly if the frying debris sits there frying day after day. If you remove the frying debris at the end of each night and change the viscosity of the oil, your oil will last longer and be cleaner longer. It’s not magic, it’s science.
