Whenever I grate the lauki it gets brown in colour and tastes a bit weird.... Because of that the while taste of the halwa or kheer is ruined.... Pls tell me what to do.. To prevent it from getting brown.
This is exactly what I was thinking. What is the thickening agent here? Regular kheer has rice. I asked around and found out that lauki kheer has sabudana.

And you can use tetra pack milk without boiling. Directly pour it into the pan

after grating,blanch lauki for 3-4 minutes then strain.
