When rolling your fondant out, try not to lift it so it's "semi stuck" to your non-stick surface that will help the fondant itself to not move. Then, with your template, you can use a small bit of vegetable shorting at the back of it to stick it down a bit . Or If you cut your templates out of plastic, that will also semi stick to your fondant sometimes with a little shorting to help . **If you want to paint the surface, use as little shorting as possible as the paint doesn't always agree with the shorting. I try do them about a week in advance to make sure they are dry but if need be 4days in the dehydrator or more if it's raining. What helps is having a bunch of heel alone made before hand so that you don't have to wait for that to dry before you can assemble.

I use satin fondant or bakels depending on what's available. Always use cmc/ tylose
