    Here's the thing, Vegan fine-dining is The Thing!🤓 And, eggplant could be the best vegetable to play around when it comes to veggie-transformation✌ Intrigued? Don't believe what you see! If you see an eggplant - yes it is. But, is it really?...🤔
    Watch the video in full to see how I apply patisserie techniques to transform an eggplant and cook a vegan fine-dining savoury dish.
    Inspired by the famous Soviet Chicken Kiev, a.k.a. Cutlet Kiev, a.k.a. Côtelette de volaille, a.k.a. Котлета по Киевски, many names, but all the same. And, now known as Eggplant Kiev, or taking into account all the Mediterranean spices used, I'll take the liberty to name is Eggplant Athens...🙃

    A quick note, as I believe I've failed to mention that in the video. Use vegan Greek yogurt, obviously, if you want to keep this dish vegan🤓 *Original Greek yogurt comes from an animal, i.e. it is not plant-based✌ Thank you!

      I would love to do your course. I am vegan, I know all the plant based dishes you make and techniques would be invaluable to learn. But this is also what is holding me back not knowing how many plant based dishes there are on your course?
      Or would you please consider doing a PB only course & include the techniques as well? 🙏🏻🌿

    here is a question what if we add purple cabbage to the hot water instead of the flowers? also a very interesting and beautiful looking dish as always!!! loved the way you shaped the eggplant into an "egg" !!

      My inspirations are usually very-very far from what I actually make at the end 😂 haha This one was inspired by the Chicken Kiev cutlet and the patisserie technique of making layered desserts🤓✌

    One more Lebanese variation
    For stuffing
    Mix toghether tahini paste, hung curd ( then u don't need xanthan) , salt , lemon juice , chopped garlic and olive oil and freeze it
    For eggplant
    Charbroil the eggplant , de skin and drain excess water, mix in cumin powder, salt, olive oil, brunoise sweet pepper, parsley and shallots.
    Follow the same process, serve with sumac spiced creme fraiche

    ah there was ur chance to make good use of the "turn the blue water into purple water trick with vinegar" :p
    purple certainly wouldve fit the eggplant theme

      I tried 🤓 haha, but failed. The tea went purple, but the pH of a white bread, turned it back into blue... PLUS the frying process didn't help to stay true to the colour... so this was not successful... Thanks for noticing!

    Chef, not a criticism, but as per my knowledge yogurt, egg , even bread crumbs ( might have egg wash ) can’t be into a vegan

      Good point! Try to use vegan yogurt, aquafaba and homemade vegan-friendly bread, if you want to keep the dish vegan. 🤓✌
