I am from La Porte, Indiana and also Polish and German. My grandparents settled in these areas, as did so many Germans and Polish people. In fact, Indianapolis got its name from 'Polish Indiana'. I've not eaten here but I bet my Warsaw-born grandfather would have loved it.

2:44 Actually this is iron frying pan. This mean that you can keep that pan for years or decades and it still will be good and healthy. Modern teflon pans are harming for health when they broke because they are not all from teflon. They are coated with teflon, which mean you can eat it when you scratch it. Iron frying pans have no bad ingredients in it. So don't throw out your mother or grandmothers iron frying pans, they are great :) and read more before posting comment.

The buffet at Bobak’s was the best. Their wolowina wolcowana was nothing short of amazing. Been closed for several years now. The market is still open. Funny, I live in Hamtramck, Michigan, the Polish capital of America, but we always stopped for Polish in Chicago.

Only in America people can eat golabki, placki ziemniaczane and 3 kinds of pierogi on one plate, followed by nalesniki of three kinds with szarlotka and WZka 😄 that's not criticizm. That is a real mix of Poland anc America.
Amerykanie co lubią pierdzieć po fasoli pewnie nawet nie odczują popierdywania po gołąbkach :) Kapusta, kalafior czy pieczarki to jednak fajne warzywa. Nie podoba mi się natomiast jedno, to że jedzenie jak widać jest chyba na wagę. Jest to z punktu widzenia restauratora dobry biznes, ale klient wychodzi po miesiącu stołowania się tam niespecjalnie zadowolony bo z pustą kieszenią. Oczywiście jadłbym tam gdybym tam mieszkał. Jeszcze parę miesięcy i będzie bób. To jest już tylko ciekawostka w Polsce ale to jest nasza tradycja. Ja bób uwielbiam i super jest tak usiąść przed telewizorem i odłubywać ugotowany bób i sobie szamać taki letni. Yummy!!!

As a Pole I can vouch that the food as presented in this video was indeed authentically Polish in its appearance. But, there is a difference to a place being “popular” and a restaurant that is great. What accounts for the former I will never understand, but the later requires one great chef. I can personally attest that there was absolutely nothing extraordinary about the fare at Czerwone Jabłuszko when I sat down to a meal during my last trip to Chicago several years ago. If I had to characterize the food at all, I would describe it as so completely dumbed down as to have been almost inedible. It was that bad, being neither creatively innovative nor attentively traditional. Indeed, I regretted eating there immediately after leaving the restaurant and regarded it as an eminently forgettable experience until, somehow, this RUclips review registered as "recommended" when I opened the site several minutes ago. Still can't believe it. As in, I still can't believe I helped myself to an obiad against my better judgement when everything about the place suggested that I should turn around and walk right out. The shots of the deplorable kitchen conditions raised my hackles further, prompting me to wonder what ever happened to that Polish characteristic about being fastidiously neat and clean? As for the cooking, the very sight of the preparation of that common blintz (no, it was not a naleśniki) was horrifying. The one I ate had an almost rubbery texture and it's filling was indeed gooey (as opposed to being light as air and flavorful and accompanied by a variety of sweet sauces and condiments). Sad to say too, there were no savory naleśniki on the buffet counters. It must have been "one of those days" when they were not available, or maybe they never thought of that possibility... My mother transformed comfort food into something superlative. It was always a pleasure to cook with and learn from her (and my father) and it was from them that I gained an appreciation of the greatness of Polish cuisine, as well as Polish culture, more generally. I stumbled upon Czerwone Jabłuszko by accident, being recommended to me by a passersby on the street, to whom I had posed a query about where I could find a good meal. The result was infinitely depressing, as it struck me then (and even more so now) when I think of what has happened to the Mała Polonia everywhere I found them in my travels across the United States. In my first trip to the Windy City in 1990 there were still a few thriving Polish neighborhoods, but alas no remarkable restaurants. By the time of my last visit in 2007, the neighborhoods were rapidly disappearing into the landscape, and the Polish people too, Americanized beyond recognition. No, I would not recommend Czerwone Jabłuszko to anyone, most especially if they have not undertaken a major renovation of the entire restaurant, including a thorough gutting of that kitchen, and called in a great chef to create the kind of menu I’ve enjoyed choosing offerings from in what was once styled as the Serene Republic. I cannot wait to take my leave of America and return permanently to my parents' native land, my true home. Perhaps early next year… Włodzimierz Zieliński
