LBW GTR is a good kit, but both are equally cool to build, I would go with whichever is easier to find and cheaper to have, or just go with the one you like the most and have fun building it.

I used super glue to attach them onto the suspension. With Fujimi brake kits it will be quite easy to adapt different wheels.

The engine comes with it and the hood is not atached to the body so you can just take it off

It doesn’t have to be tamiya cement. Any cements used for plastic models will work on these kits.

For handpaint, Do you mix paint with solvent or applied it directly from the bottle?
I paint right out of the bottle for small parts, for larger parts I added a couple drops of tamiya paint retarder to slow down the drying time.
