This video mentioned bridging the gap by restructuring the company's business processes to better align with the ERP. Curious how you work with mature companies who are set in their ways and resist changes to their processes?

I'm just looking into ERP seriously now. I'm considering 2 main options.
      1) ERPsim. I think this "game" might let me act as a consultant and get visibility into how ERP works without troubling existing business processes.
      2) I am pretty familiar with Drupal, so I'm looking at either an Odoo integration or attempting to use some ERP modules in Drupal to simulate an ERP system. I'm building for a hypothetical company first, then I might see how far I could take the company I work for. I might also look into so ERP demos, but I'm not sure how far I could get with this without actually trying to integrate the business with the ERP. I like the idea of building out a system as much as possible so I could show the interested parties how the system would work. Say we have an existing front end built with Shopify. Maybe we could even invest in a second shopify site temporarily while this is built out. Integrate the test site with the ERP. Make some test purchases, see what populates in the ERP and try to follow the business model through the ERP. Then, you get the second set of requirements, where you'll start to see what changes the company would make to fit the ERP paradigm.
For companies "set in their ways", you might be at a slight advantage in the planning phase, where you'll need to clearly document the existing processes.
