Yes sure you can ue bigger hook but better is use thicker yarn because your work will be more lace than my if you will use the same size of the thread

I never try so I am not sure how it will be looks like but maybe you can try to join each part on the last round centre dc of each shell so on each side you will be have first 3 shells then end of the pinneaple stitch so in a centre you can try to join by sl st as well and then next 3 shells to the bottom

After I do the 20 double crochets it does not lay flat and I don't know what l'm doing wrong can you help?

Mybwas the same keep working at the end will be better. You can also you hot iron with a steam 😊
