This will be a staple for me. Nice job! FYI, you can pour some boiling water over the cashews and do a quick soak (1 hr) if you forgot to soak them the night before. Also a bit of tumeric gives a great yellow color and added nutrients - it has little or no flavor. Again, thanks for taking the time to give us such wonderful inspiration.
@Kathleen, thanks for the comment--good call on the boiling water! It's easy to forget that these guys need a good soaking. Turmeric is a good call as well.
