Dude! The rabbit hole of RUclips suggested videos brought me here. Well done on that ring roller!
I have a buddy that has a fancy ass professional powered style rollers we tried once to roll some material on. We could never get it to roll a straight ring. Ended up with spiral pieces as you described. We checked all the dies for square to each other more than a few times each and they were always dead nuts. That soured my taste for ring rollers as being overly complicated. In fact, when I first saw your design, I figured there might be too much slop in the cage the upper roller rides on. But you sir proved me wrong. Keep it up!

You should put a heavy spring under the jack so that you can get more rolls out of each setting on the roller. A very heavy spring. will still give you pressure, but will take up the movement as your bends progress.
