This is a great idea for freezing peppers. Tip-If there is liquid in anything you are vacuum sealing, put a clean paper towel folded to about a half inch on top of the food you are vacuum sealing and then seal it. It forms a barrier & absorbs the liquid, so it seals and does not affect the food in any way. We do this for our fish .
A great way to save vegetables like bell peppers, carrots, squash etc....(and I learned this from an old Appalachia grandma)....is to freeze them in water. She said the freeze process will actually suck water out of vegetables, which in turn makes them slimey and mushy when thawed. But if you put them in a freezer bag submerged in water and freeze them solid, they retain all their water and last much longer, so when thawed they are not mushy.
I've cut them up the size I want and layer not touching on a cookie sheet with parchment paper and freeze them. Then I put quickly put them in vacuum sealing bags and seal them. It helps to keep them like individual pieces frozen instead of all stuck together. You can whack the bag on the counter and shake up what you want without defrosting all of them.
Add onions to some and you've got your fajita vegetables. Add mushrooms and onions to some and you have steak sandwich topping. Add mushrooms water chestnuts and green onion and you have stir fry vegetables. As long as you have enough vacuum bags, you're going to have plenty of variety. Just label them clearly.

Learn to trade. I grow peppers and herbs REALLY well. My next door neighbor does tomatoes and corn really well. We trade seeds and produce/herbs back and forth all the time. Tell your "mean old man" that you got something in trade for what you shared. Sharing is not a zero sum game. It's how communities survive. Combining our strengths to support each other goes a long way. And if that's not good enough for your "mean old man," you can always just tell him to suck it up and you do your thing anyway. Sharing and trading of produce and seed is really important to maintain genetic diversity of our crops.

I believe that our garden is being blessed every year as I learn what and how to plant. Disconnect Ryan it's easier to cut a bell pepper instead of cutting it from the outside flip it over and cut it from the inside they cut faster and less chance of you slipping with your knife in cutting the fingertip.
What do you do when you are ready to use them? Do you defrost them by putting them in the fridge hours before you need them, or maybe run cool water over the packets? What works best for you? Or can you just chop/dice them and use them frozen in your recipe? Thanks!

When I freeze peppers theyre only good for cooking when defrosted

nice idea with the fajitas. i like roasting them and peeling the skins, then freezing that. that way all you have to do is heat them up

They do get watery so it's the crunchiness that changes

Pepper relish. Use your cutoff scraps and dice small. Easy to preserve by canning.

So when you go to use one, Do you just let it thaw and then cut them up (if needed) and cook?
Do not let them thaw, they will be mushy! Take the one at a time and chop them up quickly.

They aren't crispy, but they are fine for cooking in meals.

To keep that crunch you would use them in your recipe frozen. I would not defrost them, they will turn to mush if you do.

Yes, they were washed.
