    This is a great idea for freezing peppers. Tip-If there is liquid in anything you are vacuum sealing, put a clean paper towel folded to about a half inch on top of the food you are vacuum sealing and then seal it. It forms a barrier & absorbs the liquid, so it seals and does not affect the food in any way. We do this for our fish .

      Those papers towels have some not so desirable chemicals in them

    A great way to save vegetables like bell peppers, carrots, squash etc....(and I learned this from an old Appalachia grandma)....is to freeze them in water. She said the freeze process will actually suck water out of vegetables, which in turn makes them slimey and mushy when thawed. But if you put them in a freezer bag submerged in water and freeze them solid, they retain all their water and last much longer, so when thawed they are not mushy.

    Great job !! The peppers look awesome !! I usually take my bells and onions and fry them with butter, then freeze them in small glad lock containers.

      When I freeze peppers theyre only good for cooking when defrosted

    Roasting some and preserving them in olive oil is also an alternative

    We have always felt freezing Bell Peppers gives bitter after taste after freezing, do you have same issue?

    I've cut them up the size I want and layer not touching on a cookie sheet with parchment paper and freeze them. Then I put quickly put them in vacuum sealing bags and seal them. It helps to keep them like individual pieces frozen instead of all stuck together. You can whack the bag on the counter and shake up what you want without defrosting all of them.

    Add onions to some and you've got your fajita vegetables. Add mushrooms and onions to some and you have steak sandwich topping. Add mushrooms water chestnuts and green onion and you have stir fry vegetables. As long as you have enough vacuum bags, you're going to have plenty of variety. Just label them clearly.

    nice idea with the fajitas. i like roasting them and peeling the skins, then freezing that. that way all you have to do is heat them up

      They do get watery so it's the crunchiness that changes

      They are watery and they lose their crispness. They're still absolutely delicious in a stir fry or blended into some hummus!!

    Thank you! I've been V-sealing most of my gardens produce but noticed after a couple months in the freezer some of the packages had air in them. I didn't know why...now I know it's due to moisture during the sealing process. Game changer =)

    Very nice color full papers nice vedio I once freez my papers when I was ready to use it all turned mushy and watery so how can I freez that would come out like fresh ( I don't have electric air sealer )

    Instead of buying a vacuum sealer, I use zip lock bags with a drinking straw in the very corner to suck the air out. I will not give you a full 100% but enough for storing peppers.

    I made stuffed bell peppers Half baked. No sauce. Then cooled and freezer bagged.
    The fajita packets sound great too. I’m doing that next.

    can peppers be canned liked tomatoes in a Jar ? I have lots of new jars thought maybe .. I have a bushel to do any help out there

    I am going back and watching videos. I like to pickle and can the red ones and use like pimentos. I also dehydrate some the rest go into the freezer.

      How do you use your dehydrated peppers? I just began dehydrating and not sure how I’m going to use them once I need them to get the best of the flavor/texture.

    Roast and can them with roasted garlic and onion water bath and preserve a lovely sauce spread. see country view acres for the full video enjoy and impressed wit your harvesting methods.

    Pepper relish. Use your cutoff scraps and dice small. Easy to preserve by canning.

    Why did you freeze them and not can them. Freezing is great as long as they stay frozen. So what happens to your total harvest of frozen peppers when you loose power for an extended period of time. Lost all lost. Did you save the seeds?

      Zip lock freezer bags. Just try to squeeze most of the air out.

    It's 2020 as as of right now our garden bounty is going to be beyond belief. But as am looking at this beautiful garden a message came. A strong one. Saying we better LEARN TO SHARE with our community if we want future bumper crops. However, My Old man is the greediest, stingiest, meanest human on planet earth. Now what?

      Learn to trade. I grow peppers and herbs REALLY well. My next door neighbor does tomatoes and corn really well. We trade seeds and produce/herbs back and forth all the time. Tell your "mean old man" that you got something in trade for what you shared. Sharing is not a zero sum game. It's how communities survive. Combining our strengths to support each other goes a long way.
      And if that's not good enough for your "mean old man," you can always just tell him to suck it up and you do your thing anyway.
      Sharing and trading of produce and seed is really important to maintain genetic diversity of our crops.

      @@SeliahKGreat idea but none of my neighbors WANT to share. They even refuse my offerings of fresh vegetables so I share with others outside my neighborhood. I believe that our garden is being blessed every year as I learn what and how to plant. With what I’ve learned this past two years, I’m looking forward to producing a bumper crop this year coming 2025. 😊

      Do not let them thaw, they will be mushy! Take the one at a time and chop them up quickly.

    Do frozen bell peppers, once thawed, taste the same uncooked as they do fresh? I only like uncooked bell peppers as a snack or in salad.

    Isn't that how you get food poisoning - by freezing food, defrosting it, re-freezing it and then defrosting it again before eating it?

    I’m confused, I thought peppers changed colors based on their maturity and age on a plant. You said you “planted” different colored peppers?

      When they mature, some plants produce orange peppers, some are red, and some are yellow.

    Disconnect Ryan it's easier to cut a bell pepper instead of cutting it from the outside flip it over and cut it from the inside they cut faster and less chance of you slipping with your knife in cutting the fingertip.

    What do you do when you are ready to use them? Do you defrost them by putting them in the fridge hours before you need them, or maybe run cool water over the packets? What works best for you? Or can you just chop/dice them and use them frozen in your recipe? Thanks!

      To keep that crunch you would use them in your recipe frozen. I would not defrost them, they will turn to mush if you do.

    What about onions you don’t like onions right lol jk. Awesome sauce I get peppers for free I’m so bless but I do pay forward with food. I go to churches for food they know me it’s been three years straight now ever since I broke my leg and yes unfortunately I loss my leg lol I’m a amputee I can laugh right lol, I don’t know why it’s funny zombie 🧟‍♀️ I’m gonna get you I scare the shit out of my nieces and nephews but this Coronavirus had to mess that up now I’m really bored I guess I will have a mission now my goal is to freeze everything I get all the veggies and then give them to my old neighbor all my friends are old lol why is this funny for me again idk but I love my neighborhood and I know they love me cause I have gift baskets hanging on my fence once in a while; I wonder how many times have they got stolen cause I’ve seen them outside sometimes and I don’t get someone’s taking them lol. My neighbors buy me food too man I’m bless and then the state of Texas is gonna help me with $48,000 for a prosthetic leg and electrical wheelchair I just want to say thanks to all the tax payers lol everyone even that fat kid buying ice cream at Exxon thank you to for everything is taxable. I’ll stop cause I can write a whole book that no one would want to read lol.
