5:30 the 32’ mutations in the pedal (including a Septieme 4 4/7!) are so special, no wonder Pierre Cochereau used them so much. I believe I read that Vierne used to say they sound like a section of double basses
All those who claim that the present ND de P organ is inferior to the Cavaillé-Coll clearly have the arrogance to think they know better than Cochereau, Devernay, and other titulaires. They clearly love(d) this organ to bits.
i can understand both sides. following your argumentation, it would mean to have the arrogance to think that acc was wrong when he delivered the most complete, most modern organ of its time and chose it as his favourite masterpiece till the end...
L'assistant d'alors - déjà du temps de Pierre Cochereau, le combinateur ayant été désactivé dans les années 1980 en raison de court-circuits risquant de provoquer un incendie - est Jean Fröhlich.
I can't comment on the sound of the ND organ today. But the 'usability' has no doubt improved. Even with today's crescendo and combinations broken, you can still play the way you would with the C-C mechanical console (as long as the couplers and stop controls still work). But try playing a Latry-style improvisation on that. Either you need to keep it less rich to have a hand free to change stops or you need to rehearse with someone to pull the stops for you (not much of an impro...).
I am sorry to say this after working on over 20 pipe organs in my life Cavaillé-Coll made there instruments so they would never half to be restored if they just left it alone it would of never had to have been worked on. Look and St.Sulpice it still has its original console and it will always have it. There's a quote "if its not broke don't fix it. Unfortunately they have completely destroyed the original sound of this wonderful pipe organ today it sounds like crap.
The Cavaille-Coll @ ND may sound like crap, but it's way better crap than most of what you hear today. Funny how organ builders & technicians had the audacity to think they could improve upon a Cavaille Coll, yet no-one, to this day can re-create, exactly, his sound.

I don't know what it sounds like so I don't know what to listen for. I've never encountered such stops.

You think so? They had a better bite to them
The organ was in terrible shape
