    These tea cakes are easy to make and are a fun way to experience food history. Please make them at home! Below you will find the recipe translated into modern instructions from the original. During this week's chew and chat on Frontier Patriot we are sampling some locally blended teas at our town's tea shop ^_^ !!!
    Tea Cakes (American Cookery, 1796, New York)
    1 & 1/8th cups of sugar
    1/4 pounds of butter, softened
    3 & 1/3 cups of flour. I used whole wheat flour
    2 eggs, whisked
    0.5 cups of sourdough starter
    ^ OR one 5 gram packet of dry yeast + 0.5 cups of warm water if home grown yeast is not available
    The zest of 3 oranges
    1 tablespoon of cinnamon
    In a bowl combine your flour, sugar, cinnamon and orange zest. Give it a good mix then pour in your wet ingredients the butter, eggs and yeast. Mix till smooth. Set the bowl aside in a warm place to rise for 1 hour. Preheat an oven to 350 degrees. Once an hour has passed gently knead the batter and place on a well buttered pan. Shape them like you would with cookie dough. Let the tea cakes rest for 10 minutes before baking. Bake for 15 minutes.

      I see that you've made the recipe smaller basically that's a recipe for a large amount similar in its asking of the same amount as a pound cake pancake used to be a pound of sugar to a pound of everything else pretty much that's what it was called a pound cake here we see that they put a pound of sugar to a half a pound of butter and 2 lb of flour the amount here would probably be enough to probably feed more than 20 people or more than a hundred 200 worth of those little tea cakes maybe I'm wrong and it's closer to 2000 to 1,000 tea cakes it's hard to tell.

    You’d cook high heat items like bread right after the ashes were removed, then cakes or pies, then cookies or biscuits, perhaps a stew, milk puddings after that, then the last cook could be drying herbs, fruit, or stale bread. The early settlers didn’t waste anything, even heat in an oven. Truly remarkable this channel is to let us catch a glimpse 🙂

      Yes! We have a wood fired pizza oven and while it doesn't work exactly the same (you don't remove the wood, for one), we also pretty much follow this pattern! Pizza first at around 350 degrees Celsius, then bread or focaccia at around 220, then roasted vegetables or a stew for meal prep at around 180, and then finally toasting croutons and bread crumbs at around 90. It's fun!

    That house is gorgeous! And those tea cakes look amazing. I had no idea that the outdoor oven had to 'burn' for 5 hours. I thought 1 or 2 would have been plenty. I'm glad I learned the truth of the matter. 😅

      I think, it's one of the reasons, communal baking was a thing - at least in European villages.
      With the amount of time and fuel needed, it makes sense to bake everyone's bread and cake in the same big oven.

      Yes! They would have one bake day, maybe on Saturday to bake for Sunday and the coming week. They would start with whatever needed the hottest oven and then as the oven cooled off cook things that needed cooler and cooler temperatures.

    These sound delicious. What's funny is....this past Friday evening, I mixed up dough for snickerdoodle cookies, went to put the first batch into my oven. That didn't happen since right before my very eyes I watched the bottom heating element in my oven surge, spark, and then melt through itself in one little spot. 🤦🏻‍♀️😳 I quickly searched online if they could be microwaved and discovered that I could smash about 4 of my cookie balls together, microwave for 50 seconds, and Voila! - a snickerdoodle tea cake is born. So not exactly old school, but it was tasty. 😁 And maintenance in my apartment complex changed out the element yesterday and I baked the rest in the oven as normal cookies. 😁😍😋😋😋

    fantatstic to an old fashion house without a modern day oven in the kitchen as the real oven old fashion oven was outside like the olden days to prevent house fires and over heating indoors. also neat that there was no air conditioner yet somehow everyone remained ok without it

    I'm interested to know much more about the ingredients in a historical sense. For example- how common were they in a typical household for that time and how much effort or expense was required. I did see a healthy amount of cinnamon used for this but it would've been very expensive no?

    Those look delicious Justine. My grandma used to make tea cakes by the dish pans full. She also made homemade bonnets similar to yours, some with tails and some without.
