    I'm so glad they moved away from a lifestyle-based channel and embraced the personality-driven video styling they use now. The recipes are much more engaging in 2019.

      ImSpartacus not necessarily true. When people have hair that turns grey, it's not like when a dye job grows out and a layer of grey grows in. Individual strands as a whole turn grey, and often happens in chunks. Especially when it's premature like in Claire's situation.

    Guys please check the recipe and then comment! The recipe includes lots of spices like cayenne,paprika,garlic powder etc! I tried this recipe and its the best and the most flavorful fried chicken I've ever done. So don't comment without knowing anything, this video is just a quick visual.

      there are people who are culinary perfectionist. you don't have to be good at cooking to know what is good and what is bad. being a michelin star hunter id say you're naive..trust me there are so many bad chefs out there and its not a justification to be a chef to know good food

    I made this and it turned out really well but I did change a few things. I added a dash more of paprika and cayenne to the flour mixture to give it a little more spice, I didn't use the bourbon for the buttermilk mixture (the recipe says its optional) and I added a few dashes more of hot sauce, I didn't use the seasoned mayo at all and instead I made a copycat chick-fil-a sauce, I used pepperjack cheese, dill pickles, plain chopped lettuce and it turned out amazing. 10/10 highly recommend

    I made this for the family today I can honestly say it was the best fried chicken sandwich I've ever had, if you follow the steps it comes out amazing. Only downside is it did take 3 hours to make with all the waiting etcm

      Great way to dull a knife quickly. Ceramic is harder than steel. Which is way you can hone a knife with a ceramic rod.

    I work at a biscuit company and one of my many jobs there is fry. Oil is hot and burns, definitely don't rush when dropping and try to lay it flat so it doesn't stick to itself.

    I would not recommend sprinkling salt over them and allowing them to stand overnight because salt draws out moisture. If you do, you stand the risk of them being very dry. Also, the reason her chicken is so dark is because her seasoning had color. Use a seasoning that's white.

    One thing to fix: You use full sour pickles on fried chicken sandwiches.
    There's so much fat (even more so since you buttered the buns, I'd recommend using a little of the mayo on both sides as a moisture barrier to keep the buns intact while eating) you *absolutely need* the lacto-PUNCH of old fashioned sour dill pickles on your sandwich.
    That cloying sweetness from BnB pickles has no business on this savory sandwich.

    I made this sandwich exactly as the recipe. Not bad. A regular chicken sandwich with lettuce, tomato, mayo, and maybe pickles still beats it I think. The best thing here is the tip on making the breading crispy. Solid gold. Thanks!

    I love everything about this sandwich but substitute aardvark habanero sauce for Frank's red hot. Frank's is a joke and should not be considered hot sauce

    Fun video. I made fried chicken at Hardee’s for few years but never realized that they use a similar method of adding the seasoned dredge to the buttermilk. I think I’ve learned a lot about cooking since those days though I don’t cook any faster. I was always a tray or two of chicken behind demand. My chicken always had a thin flaky crust though so you wouldn’t break your teeth on it. There was another guy I worked with who made it super fast and his crust came out super thick. It seemed too sloppy to me.
    I think I’ve consumed more than my fair share of bon appetit and Claire’s content as I’ve started to work my way back into the catalogue. Claire’s presentation skills have really developed since this was filmed. I enjoy her baking videos a lot, especially the bread. It’s too bad she wasn’t able to be there for the end of the sourdough episode. Sometimes Brad’s unbridled enthusiasm needs a counter-balance. It would be fun for her to do a recreating Wonder Bread video. If she’s interested, a good place to start is a recipe called Egg Harbor bread (found in Bernard Clayton’s Complete Book of Bread) though it has more body than store bought bread. I think some videos on quick breads like a dressed up banana bread or pound cake could make for some fun and interesting content too.

Dear Bon Appetit: THANK YOU for the technique of adding liquid to the flour to make crunchy bits! It's something new to me and I'm going to try it. I appreciate your sharing all these FREE (free!) videos in spite of all the perfect chefs here who can't seem to get up off their own butts and publish a magazine or have a professionally-filmed channel.

    Chicken was waaaay too dark. Start at 160-170c, then let it drop to 150c to finish. You'll seal the coating so it isnt greasy, but it won't be burnt and bitter.
    Also you don't need to cure or acid bath meat that you're cooking quickly to make it more tender. Just brine it for a couple of hours and flatten it so it cooks evenly. Then dig out whatever herbs and spices you have. They all taste good!

      Furthermore, if you actually look at the recipe, it uses seasoned flour. Don't need to season chicken directly if you're using seasoned flour.

      You folks act like every recipe needs a dozen different herbs in it. Chicken thighs are fatty and flavorful. Buttermilk is tart. Salt is, in fact, seasoning. Then you've got hot sauce, seasoned mayo, and pickles. Plus, the bread is crisped and coated in butter.
      Like, what do you think flavor is? You want cumin and toasted fennel in your fried chicken, or what?

      When you talk to chefs and restaurant pros 'seasoning' often refers ONLY to salting food, everything else is an ingredient. Plus if you can master salt you need very little else (also you didn't read the recipe, but I'm here to defend salt)

      the thigh has a high fat content which makes it juicy, what you want to dry out is the water moister so that when you fry it gets crispy n doesnt spit oil everywhere

      Considering that the vast majority of the best restaurants in the world are in predominantly white countries (Italy, France, Germany, Belgium, Argentina, Russia, Denmark, United States) ran by predominantly white chefs, I'd say yes, they can.
