Please be very careful when eating Jerusalem artichokes. It can be grown easily, ( actually this plant grows wild along roadsides, we call them sun-flower) is very nutritious, but can cause severe bloating and gas problems if eaten indiscriminately. Eat in small quantities and not more than once or twice a week. And DO NOT EAT RAW though it tastes quite good sliced fresh into salads. Always cook the sunchoke.
