It's because although Black wins a knight for a pawn; White gets a lot of long term positional compensation... an open e-file (if Black tries to block it with Ne5, then f4 opens it again or wins the knight back); a pawn on d5 that effectively stifles both of Black's bishops, but the main point is that Black's King is now stuck in the centre, it shatters Black's centre and White has "all the fun". The open diagonal makes Bh3 potentially lethal; Nd4-f5-? brings in more of White's reserves and if Black castles K-side, moves like Re4 quickly lead to mate. It is a typical sacrificial offer (that and Nf5) in a number of lines against the Sicilian; if Black continues winning material with Nxb2... then with Rxe7+ and Re1+ all White's pieces have a brilliant future while none of Blacks do and nobody wants that against a skilled tactician (like GM Hansen). A computer might take it, but it's going to be hell for a human to defend and I would guess the engines give White a plus after ed, ed despite being down a knight... It's so interesting that Eric casually beats seriously good players (maybe best in their hometown) but when he faces worlds number one (The Goat) it's literally same -if not higher- level difference between them. I mean, Eric plays extraordinary but Carlsen literally can eat him while he's sleeping. I just can't understand how rating system is so balanced, when you see some 300-400 elo diff, it's like Eric is playing with a computer. I'm sure Caruana, MVL, Ian would be same. Chess top 10 is on another dimension, completely different than rest of the world.

Yeah it's good entertainment. I'd suggest Bartholomew, Yasser Seirawan, or Daniel King for some improvement. Watching GMs play is only entertainment, it's just too advanced to learn from in fast time controls
