Yorkshire pudding and roast potatoes (cooked in goose fat) are the best sides for this dish. Dont forget the horseradish sauce for the beef!

You could also use the celery ribs as a grate on the bottom of your pan

Oh yea horseradish!! On beef horseradish is fantastic. Of course a bloody mary will marry up this dish just fine.

@@richardblankenship5481 omg man, how do I post photos on this thing. Its epic... I mean.. yeah.. we even used a blow torch, my 13 year old son and I, to sear the outside. I could a whole video on this just based on what the BBQpitBoyz give us to work with.

I think when I can afford a rib roast I'll grill it ! I have cooked many and I always,always let it sit on the counter for 2-3 hours until it comes to room temp.More tender outcome !!

Actually I have a question for the Pitboys do you guys use your performer more than your weber smokey mountain?I am looking to buy a smoker but it seems I can get more bang for my buck with a kettle grill.Also can all of your recipes be used on a smoker?

anyone know why the ribs are cut off before cooking and tied back on? Wouldn't it be easier to cut them after the roast is cooked?? Is it to get smoke flavour on all sides of the ribs or something??
Roast looks great - making this tonite, just not sure why you'd trim the ribs off so early.

Question, I am making a rib roast for thanksgiving but I am prepping the night before and actually cooking at my sisters. Is it okay to prep the way you didn't but stick in a zip log bag and keep it zip locked over night?

I'm a big BBQ guy myself, but i've never done this Rib Roast Beef. So I'm wondering, why cut the ribs loose only to tie them right back up? What am I missing? Thanks.
If I go see my butcher shop and ask for a 4 rib roast, I get one twice that size, this one would be called a 2 rib, rib roast
