Should we train with our off-hand as well?
Definitely. It gives you more options even if you won't use it as much. And it's always a good thing to exercise the opposite sides of the body equally.

You know what would work better than having to do a combination of 8 movements that leave you completely vulnerable? A solid stance, good head movement, and one movement of your knife hand to the opponents throat. Just one. This is all unnecessary and when you do unnecessary moves in a fight you risk the opponent doing what is necessary.
Maybe one day we will train together and you will teach me the best ways!
Looking at the only group of people who are in real combat situations regularly ie the military and the police, the only combat training you should be influence by is what they’re doing. There is a reason they do this type of training rather than what your doing. It’s because what they’re doing is actually effective for the real world. Unlike this.
