2. Which rack shd we keep in otg?
3. I hv 40 ltr otg if I hv leftover dough after filling the tray shd I keep the remaining in fridge or it can be outside for the next batch
4. If I’m using hand blender which hook and speed?

bake in center rack. You can keep outside untill you bake second batch. use whisk blade for beating. And bake cookies the mentioned time. It will be light golden. Once u remove the tray from oven the cookies will look soft. as it cools it hardens.
