Some people would complain if they were hanged with a new rope. I have a Pit Boss grill with both of these mods installed and I've got to say it improves the quality of the cook immensely. If you want to use the sear feature, take the baffle out. That's why it was designed to be removable. The reason your cooks take longer is because, like most people, you cook in the middle of the grill. The deflector spreads the heat out. Sure, your meat cooks faster without the baffle but you probably also end up with a thick crust burned into the bottom of your meat. As for the ash, that's note from the baffle. That's from burning wood pellets. Read your manual. You're supposed to vacuum out the unit periodically even without the baffle. My manual states it should be done every five cooks or so.
Just got done modding my grill. The middle was way hotter than the sides. bugged me. I took 1/4 plate welded legs on each side to make it clear the middle pot. Welded a 3/8 thread rod to the end and drilled some holes . Now I can slide it out of the way to sear still and get the more even cook. Hopefully... gonna try it out today with ribs
Thanks for the honest info. Question for you. Do you feel you get good smoke flavor from your pellet grill when you cook and smoke with it? I just brought an PB Austin onyx and can't wait to fire it up. But nervous if I'll get enough of that flavor in my food.
@@pitbosshogg6129 I have one of those. I've cooked with it and was really disappointed with the lack of wood fired taste and lack of smoked flavor in my meat. And I made chicken burgers. Should've been able to taste something. But not at all.
Works excellent, low and slow is the name of the game. Cleaning up after EVERY cook is smoking 101, it's a part of the deal.

I had the same experience with a heat shield mod on my 850p- liked it the old way even with the hotspot.

This fixed my temperature fluctuations and now I have consistent temps woohooo
The heat diffuser is for cooking low and slow .
Maybe the size of of diffuser has a lot to do with it? I got a smaller one with just two windows and it’s fine

Try different brands of 100% wood pellets and store them in food-safe ait-tight buckets. My Pit Boss smokes great.
I would advise to get a smoke tube from Amazon!!
