JAmerican here! I was taught that cleaning your meats, fish, and poultry with something acidic such as vinegar lime and lemon is not necessarily to “kill bacteria”. It’s to help loosen, dislodge and draw out the impurities from the animal. Especially, when using a braising method of cooking. It helps to facilitate a dish that is more clean tasting and less muddied.

Why you put carrots so early in the meat when the oxtail take longer fe cook than carrots? your recipe is bad Star...the carrots, should go in later...even youtr thyme as heat destroy thyme flavor!!
