    having a piece of 86% cacao and wondering why my spanish and mayan ancestors loved this chocolate as much as i do, its a small tether to the past and very delicious

    You mention the washed beans before the firmentation, this is not correct, beans are either washed or firmented,in any case firmented before they are washed.😊
