Great tips on the freshness of the meat. I usually keep my knife downward from gill to vent across the ribs. It scares me how you cut towards yourself.
Thanks! I’ve been doing this for a long time. Thousands and thousands of fish over the years and I’ve never gotten more than a nick with the knife. It’s definitely partly in how you control the knife. 🤞
