Oh Korean and Japanese cuisine is wayyyy different. They're such different cultures with different histories...I can't even think how to put it into words! When I think of Korean food I think "spicy," when I think of Japanese food I think "subtle" but that's really oversimplifying it!
+mimei Korean cuisine I'd describe as the past need for preservation, whether through pickling or fermenting it or spice it for flavor (commonly anyway, for side dishes it's usually spiced and fermented, but there're loads of nonspicy Korean foods that are fantastic. ^^). Not to mention all the odd parts of an animal that can be used for stew or soup. ^^ Like oxtail for example or congealed ox blood, or even knee cartilidge. Too bad you didn't try one food in particular though, 홍어. xD
