Ingredients:
1 ltr. Full fat Milk
100 grams Rice, soaked
150 grams Jaggery
1 tsp Ghee
50 grams Cashews
50 grams Almonds
50 grams Raisins
1 tsp Green Cardamom
Generous pinch of Kesar
Method of preparation:
Heat ghee in a vessel, add rice, stir it until it becomes nice and fragrant.
Add milk, cook it until it becomes nice and thick.
Add jaggery, saffron, green cardamom, give it a stir and allow the jaggery to melt completely.
In another pan, heat ghee, add nuts and stir them occasionally till them turn golden in color.
Transfer 3/4 quantity of the nuts to the payasam, give it a stir and our Payasam is ready to serve.
Take the Payasam out in a serving bowl and garnish it with the left nuts.

Hi, I have noticed milk and jaggery don’t go well together as jaggery curdles the milk. How to avoid it? And in this case it did not curdle in the payasam recipe.
Hi Prashanth Divate, to avoid curdling of milk, reduce the flame or turn off gas while adding jaggery in milk.

Once rice is cooked, I switch off the flame and let it cool. While luke warm, I add jaggery powder and mix it. Thr best way out.

Coconut chunks are added in lentil payasam not in rice milk payasam.
But jaggery will affect the milk

The process is same as we made kheer in Rajasthan. I think you need to research on it.
goyal goyal Brother it’s correct way of making paalpaayasam.but the rice should be raw paddy and no jaggery only sugar and no almonds but raisins and lot of ghee.in kerala we have many kinds of payasam dis is the simplest one with milk rest of all with coconut milk and jaggery

Bhai sahab it's Simple Kheer. Paysam bolkar kheer ka payjama bana diya.
It's called Paysam in South. Dishes have different names all over India as you know India is a pretty diverse country. Secondly in traditional kheer we add sugar while here it's jaggery.
