    Ingredients:
    • 500 grams kairi (raw mango)
    • ½ cup chana dal
    • 1 sp jeera
    • 2 sp saunf
    • 2 sp methidana
    • 1.5 sp salt
    • ½ sp haldi powder
    • 2 sp red pepper
    • 1 sp kalaunji (onion seeds)
    • pinch of hing
    • mustard oil
    Instructions:
    • Cut 500 grams kairi (raw mango). Wash and dry them on a cotton cloth.
    • Dry roast ½ cup chana dal for 2 minutes.
    • Then dry roast 1 sp jeera, 2 sp saunf and 2 sp methidana for 2 minutes on low flame.
    • Now, cook mustard oil and let it cool to room temperature.
    • In a mixing bowl add kairi, chana dal, 1.5 sp salt, ½ sp haldi powder, 2 sp red pepper, 1 sp kalaunji (onion seeds), roasted items, pinch of hing and mix. Leave it for 1 day so that all masala is absorbed.
    • In a dry glass jar, add this achar and add mustard oil so that achar is dipped in oil.
    • You can keep this achar in sunlight for 2 days or you can consume it after 5-6 days by keeping in shade.
    • Tasty kairi chana dal achar is ready to be served.
