    Thanks a lot for this informative video. I'm impressed with this machine. I've been home roasting in a 20 dollar popcorn machine for some years. Main three issues are of course known: ambient temperature determines roasting success, control is limited as first and second crack follow each other very rapidly, and roasts are uneven. Gene Cafe seems to take these drawbacks away. It looks icnredibly well built and
    I like the batch size. Very nice!

    I used to roast with a popcorn machine as well. Eventually I tried a fresh roast from Whole Foods of beans from Costa Rica. I was amazed how much better my latte tasted made with the Costa Rican beans. The bottom line is that popcorn poppers roast the beans way to fast and the sugars in the beans can not developed as they would in an at least 14-minute long roast.

    I've just bought this machine and have tried roasing for two different occations. They have all been successful, but the first ones did become a bit too dark even for my taste.
    Lesson learnt is that I have to start the cooling cycle when I approach the roast I want, not wait until the coffee looks good and then start the cooling cycle. In the end I did get some excellent french/vienna expresso roast though. Actually one of the best espressos I ever had. :) (I mixed some 50% Brazilian Arabica with an 35% Indonesian Robusta and 15% Old Aged Sumatra. They were all roasted into Vienna terrirtory.)

      Hit the emergency STOP and you can remove the canester and dump the beans yourself to cool them quickly. Just remember to put the canister back on the machine right away and continue the cooling cycle from the machine itself so you don't overheat any components.

    How reliable of this machine? Does it breakdown so far for the past years?
    Do you do back to back roasting?

    • @TheCaptainsCoffee
      @TheCaptainsCoffee  3 года назад +1

      The Gene is a very reliable roaster! The manufacturer is also very responsive should an issue arise. All appliances will eventually wear down over time, the most common part of the Gene wearing out being the heating element, though that should take you several years even with very heavy roasting. The manufacturer sells a replacement element that is relatively easy to swap out in that case.
      You can certainly do back to back with the Gene! You will need about 5 minutes of down time between roasts to fully cool the beans manually if you choose to do this as well as heat resistant gloves to empty the chaff collector and remove the beans from the roaster for manual cooling. Be careful as those parts will be very hot!

    • @TheCaptainsCoffee
      @TheCaptainsCoffee  Год назад

      I appreciate your thoughts, but my experience has been vastly different! I own the Aillio bullet as well and absolutely adore mine. It is significantly more difficult to master, but it's batch size is 4x bigger and when you get the hang of it, you can roast coffee as good as the pros. But if easy and low maintenance is the goal, the Gene is an awesome roaster! It all comes down to the roaster's goals

    • @BenCotten
      @BenCotten 10 лет назад

      Silver skin. In wet processed coffees much of the silver skin is removed in processing so it does not end up in the roaster. Dry processing does not remove as much of the chaff. So you get more chaff in the roasting. Dry processing and wet processing produce different flavors.

    I am confused as to what you said at 8:17. You say the roaster is very quiet, and then say it is hard to hear the first crack. If the roaster is quiet, you would be able to hear the crack better, because the sound of the roaster would not be competing with the sound of the bean crack. In fact, on SM videos, they say the downside to the Gene Cafe is that the roaster is 'loud' and it is hard to hear the crack because of that. I roast exclusively by sound, and that is the reason I stayed away from this unit. Please explain.

    • @Vakubli
      @Vakubli 4 года назад

      I had the same thought, but then interpreted that comment to mean that sound is well-contained within the tumbler. This would include the crack sound.

    • @birage9885
      @birage9885 4 года назад

      @@Vakubli That makes senses, and is probably what they meant. But, since the insulating of the machine sound also insulates the crack sound, it is still a deterrent for me. I am sure it is a hard puzzle to solve, allowing the sound of the bean crack, but muting the machine's inherent mechanical noise. I would love to 'rent' one and see if it is that bad or not, and if not, then I would purchase. I am keeping my ears to the ground. The unit looks like a good roaster though.

    I just received this machine and the manual forewarns about possible ways of fire erupting, the most dangerous being simply if the electricity goes out the beans could catch fire. My apartment doesn't have stable electricity, the breaker trips too easily and it's not worth the risk so I'm returning it. Forums speak of chaff catching fire, of two year old Gene machines catching fire. I don't think having one of these is worth the risk of burning down one's house. The machines look too innocent you would never think of how easy a fire could happen. I bet very few read the details just like every other product we presume its safe to use.

    • @kamisamaz
      @kamisamaz 7 лет назад +11

      Machines are very dangerous. Some machines can mangle you or even vaporize you, while others can impale or disfigure or choke you. I once read about a machine that mulched a fellow. I had a friend who had a machine which mowed a couple toes off from his foot. One guy I know lost an eye to a machine which shot a paint ball right into his eyeball! I see that maybe your apartment also is hell bent on killing you with all that faulty wiring, but I'd say maybe the hair trigger breaker is especially dangerous. I'd probably not be able to sleep in that place, but would gather my things and very cautiously back away from it.

    • @einfussganger
      @einfussganger 6 лет назад +2

      I've been a home roaster for about 20 years, mostly using what some consider the best home (near-professional) roaster, the Hot-top. Great roaster, though quite expensive. Last year I was roasting a smaller than normal batch in my garage. Toward the end of the roast, the temperature climbed suddenly to my set point of 420ºF and the beans were black. My fault for trying a small quantity and not realizing the roast was going too fast. Upon hitting the limit, the beans ejected to cool and as soon as they mixed with air, they instantly caught fire. Think about the move Backdraft. Within seconds, the roaster was completely engulfed as the plastic shell, already hot, caught fire. I had to unplug it and carefully lift the flaming mass off my wooden workbench and quickly and carefully bring it out to the driveway where I threw it. Lessons learned: keep a fire extinguisher handy, don't roast short batches, always watch the roast and never turn your eyes away.

    Judging by that chaff collector that really looks like a poor design unfortunately, especially if you cant roast a lb at a time that is a whole lot of electricity energy wasted for say half a lb, it's really not evem worth it, these machines due in excess of usually kver 1000watts,if they increased tge roasting capacity & better chaff collection this would be a nice machine

    hmmm...a 20 minute roast is too long. the beans are "cooking" instead of roasting. have you ever had a roast that stalled when using a 460˚ setting?

      If he enjoys the coffee produced at these settings, is it "too long" or "wrong" to roast them for 20 minutes?

      Some people enjoy burnt coffee... some enjoy under roasted coffee which are painfully floral and acidic. They do what they enjoy, not what is "just nice" according to certain guidelines.

      Unless you had a temp + time graph, you wouldn't be able to tell if the roast stalled... Stalling is when the coffee stops increasing in temperature or when the temp starts decreasing. You can totally roast for 20 minutes without stalling, granted it's longer than I would personally go in a drum (between 12 and 14 minutes).

    They crack to release heat energy? You mean expanding steam plus weakened shell causes the beans to crack. Lol wat. I think I'll go elsewhere.
