    One of my favorite things to bake… and eat! lol I love them straight from the fridge. It has to be the most rewarding treat to make. The end result is like a little masterpiece, a labor of love. I also love watching others make them. Everyone has their own way ❤️ I experimented with different recipes until I found one that I loved best.

    I have a nut allergy but still decided to make a recipe using almond paste. They are in the process of cooling. I’m planning to use raspberry, but I do love apricot so I may use that next time. Now that I’ve seen you ladies make these, I’m so happy I’ll be able to eat them. I can have almond flavoring. I’m so excited to make this version. Thank you!

    These cookies are a reason for living😂 One of my FAVORITE things!
    My grandmother and I used to make them together and it doesn’t feel like Christmas without them. I use almond paste and breaking it up into small pieces is one of the steps I don’t look forward to. I also separate the egg yolks and add each part separately. Why do I do this????
    Your recipe is less complicated, I just have to see if I can bring myself to “stray” and give it a try.
    I don’t know if it’s the same for both with and without the almond paste but I store them in an airtight container to keep them moist and they are always better the next day. Thanks for the recipe ❤

I know why you don’t stray away from the original recipe, it’s simply because you want to create the same exact cookie your grandmother made. I’ve made several struffoli recipes and always end up using the original one my aunt and mom made. Buon natale. 💕💕💕💕

      @ It is one cup. Did you cook them through and move to the top rack? It is a thick wet batter.

    Actually. These are actually called tre color. Italian people have called it that due to the resemblance of the Italian flag. 🇮🇹. They are not rainbow cookies. That is very wrong. 😑

      @HopeLaFluer1975- It's interesting though that you make a point so confidently but it is wrong, these cookies were actually created by Italian immigrants in the US as a way to celebrate their heritage. So, they're more of an Italian-American invention. Just to explain the connection. that said, you can find similar cookies in Italy, especially around Christmas. They're called "pasticcini arcobaleno" which means 'little rainbow pastries'. The red and green colors fit in with the holiday season there. Ultimately, whether we call them rainbow cookies or tricolor cookies, they're a delicious treat that connects us to Italian culture and traditions. And that's something we can both appreciate!
