    I was raised having rum cake on all of my families birthdays. Then I moved to AZ 40 years ago from Massachusetts, and even the two semi Italian bakeries they have out here so not have them. I’m going to try making this for my son’s 40th birthday this weekend. Thank you so much for explaining it all. So happy I found your videos ❤❤

    I made this cake this weekend and it is AMAZING!!! Followed recipe and instructions closely. Made the cake and cream one day, assembled the cake the next. Not gonna lie, I had a piece for breakfast this morning! It’s irresistible! Honestly it’s the best cake I’ve ever made. I’ve had rum cake from bakeries many times in my life and I’d put this above all of them. Thank you, Alessandra! You’re the best! ❤️🎂

      I know the feeling. I'm the only one in my family who knows how to make my mom's Raisin Source for ham. I was the baby of the family who lived w/ her last and remember her preparing it for hams.

    When I lived in the North End of Boston, this was my birthday cake. I've retired to Alabama and have sent this recipe to my children to bake a home made version for my next birthday. I'll drop off several bottles of rum and ingredients, so by the time my birthday arrives in July, it should be perfect! Any extra tips to share with my Irish children would be appreciated!!

    Excellent recipe and I cannot wait to try it!
    Mio dio! They used to beat the yolks by hand?! povra bestia!
    But as a restaurateur with 25+ years experience and 6 of those as a bartender,
    Captain Morgan is most definitely not quality rum. It's not the worst, but quality isn't the first word I'd use to describe CM.
    Inexpensive quality rums include Mount Gay, Plantation, Brugal, Flor di Cana, and Barcelo.

My dad is Marchegiano, so as the family cook I've been making more and more traditional Italian dishes and baking for family occasions. In our city, a long-time baker whose specialty was rum cake just retired, so I imagine a number of Italians in my city are also looking for this recipe!

      @@alessandrasfoodislove Today I discovered your channel searching for authentic Italian cannoli thinking of my Italian family members. I subscribed to your channel, recipes passed down from grandma are the best! And I prefer a visual video. Because I can rewind if I miss something and better than a cookbook w/ one picture. I'm on my own learning Italian baking here online.. Both of my grandmothers were Irish, one who lived in Ireland passed before I was born. And the other one emigrated from Ireland to the USA. She never showed me how to cook, bake, or even cooked me a meal. I do bake some of my Irish mother's and Irish aunt's recipes. However, none of them cooked Italian! I find baking a bit of a mystery till discover what's in them. I would love to have had a grandma to show me how to bake. Thanks for your lessons!

      I’m so happy that now you’ll be baking italian desserts. Ireland is on my bucket list. I do make a delicious Irish soda bread passed down by my good friend Morgan from her grandmother Murphy. Nothing like passed down recipes. I’m hoping to do a video before St Patrick’s day. That’s a very special holiday in our house and I make a big pot of corned beef. On the bread we strictly use the super expensive Irish ☘️ butter. Lol it’s a must.

      @@alessandrasfoodislove I think your talented baker! Hope your mom loved her rum cake!. I wanted to taste it. My sister always bought the best rum cakes from Boston Nth End back to us when we lived in GA. She had an Italian boyfriend in her younger years. Your rum cake looked s professional! My brother married an Italian woman and my cousin married an Italian man. Then there was the stuck-up Italian family from Queens New York that I married into..I couldn't stir the sauce (gravy) right never mind being allowed to stuff the cannolis. I make a mean pasta sauce though. My impression of the older Irish generation is they call it the red sauce and can live w/o it. Btw, I use butter, & buttermilk and I add caraway seeds to my mom's Irish soda bread recipe. Some people leave them out. My mom put 2 tablespoons of shredded orange rind in her Irish bread dough I do as well yum! The boiled dinner is quite nutritious. I had it for dinner w/ ham last night. Cheers, Mary

      Thank you so very much Marcella! I really don’t get the concept of not sharing recipes. If we don’t the recipe will die with that person. I’m all about sharing. I get so excited when I get a message that someone made my recipe. Food is love. Make the custard and pan di Spagna the day before. Then assemble the next day. The video sure helps to the step by step. I was very conservative with the rum. lol a little more will be awesome. ♥️💚🤍♥️

    This was fun to make, a lot of "baking rules" to follow . I have been baking for 40+ years but this was my 1st sponge cake and 1st rum cake. We bought rum cakes when I was a kid from a bakery . It came out pretty good for my 1st one. I candied the almonds and put them on the sides. Thank you for all the tips and recipe.

      Lol on friend Laurie saying the same. Some cooks do not like to bake because of so called rules... I love it. Mocielllos bakery always had the candied nuts. I toasted them a little 1st then put into the sugar. Next time I will lay out the almonds flat and drizzle with sugar syrup, less clumps. Thanks again

    This is my favourite cake since childhood and having been looking for the recipe for a long time. The local Italian cake shops do not seem to use rum anymore which is not the same. I made the cake for easter for the first time and it was a hit. The only thing is my oven is fan-forced and 35 minutes may have been better. I used the left over custard for cannoli and they are all gone in a day. The cake also seems to be more moist and taste better after two days in the fridge so would recommend making two days in advance. This recipe was easy to follow and not as complicated as some others I have found. Thank you so much for sharing. You are a star 🌟!

      @@alessandrasfoodislove There was a cake shop called Marconi cakes in Sydney many years ago and they had a similar recipes to yours, except almonds were small pieces. I have tried to buy the continental cake from many other cake shops, but they either do not use liquer or possibly use Strega. I would always be disappointed as the rum was missing. Now that I have found the recipe I have a new job for birthdays and celebrations.

    Beautiful rum cake Alessandra! My local Sicilian bakery makes my favorite rum cake a bit differently. They really soak the cake so much that it drips from the bottom. And they frost the top and sides with buttercream and coat the sides with toasted coconut. The chilled sweet buttercream and coconut balances beautifully with the rum and tastes amazing. They also add mini chocolate chips to the chilled custard filling, but I like your idea of making a layer of chocolate custard with the cocoa powder. Maybe you would like to try these variations. You've inspired me to make this cake myself! Grazie!

      @@alessandrasfoodislove the bakery I used to go to in Philly uses ricotta cannoli cream and crema pastierra it’s absolutely amazing I’m using your recipe to make the cake now and using mascarpone instead of ricotta for one of the layers

    Thank you for the video and the ingredients. I made this cake this past weekend for my dads 81st birthday and it was a hit. I have a question with regards to the almonds on the cake. I made this cake the day before and had it in the fridge over night. Are the roasted almond's on the cake supposed to be a little soft? I am assuming this is normal? Looking forward to your answer.       Thank you so much Mary. Unfortunately my sister was in a flood zone and under 7 feet of water. The family is all together helping her and her family clean up from it all. Even with the total devastation we are grateful 🙏🏻 that they’re all safe. Everything else can be replaced.

    My dad's family is from Castello del Lago and Italian Rum Cake has always been his favorite type of cake! His great aunt made an incredible one when she was alive. I am stereotypically "medigan" in my family, but I managed to make a half decent rum cake thanks to your wonderful recipe! It has now become something my family requests! Thank you!

      Thank you so much for watching! You had me laughing at the Medigan 😂😂🤣 wish I could’ve seen their face when they tasted the rum cake you made. 💖💖 I absolutely make it in 2 days. The custard, syrup and pan di Spagna I make the day before.
      Store custard and syrup in the fridge. Pan di Spagna pesce in spring form and just cover with paper towel leaving it on a counter. If you’re in a very humid area (Florida) store in the fridge too.

      Hi Nina,
      The eggs I used are extra large. That’s normally what I use. Yes, you can use a tsp of vanilla but added once the custard is already cooked. I’m super excited for you making the cake. Also, if you like extra rum absolutely add it. Don’t try to make the cake in one day. It can be challenging. Make the custard and pan di Spagna the day before. Next day the syrup, whipped cream and assembly. This cake tastes even better after a few days made, the flavors really come together. Unfortunately, there’s any any leftover :)

    Idk, maybe I got rum & cassata cakes mixed up, but they aleays called the cakes I had cassata cakes. Rum one with vanilla & chocolate custard layers? Cannoli one with cannoli cream & chocolate custard layer? Hmmm, wish I could remember. Thanks for passing on these wonderful Italian desserts (& dishes).

      They are close and truly be interchanged. It really comes down to what filling you like. I do have a cannoli cake recipe up. I also make one with peaches. of course lots of rum in it too. lol

      Thank you so much! The custard I usually make the day before and let it set overnight. Otherwise about 4 hours in the fridge. The pan di Spagna/sponge cake i leave in its pan and cover with a kitchen rag or paper towel and I leave it on my counter.

      2 cakes will be plenty for 40 people. I suggest you make the sponge, custard and syrup the day before. Let it sit at least 8 hours so the rum will really soak in the cake.

      @@luisakyriacou131 hi would just do the espresso. If you want to add alcohol maybe try a Tia Maria or Kahlua. No simple syrup needed. I do make a coffee cake but the outside has buttercream. Will try to do the recipe doing. When the espresso is hot add the sugar so it melts. Let me know how it turns out.

    Grazie per aver condiviso :D - i've been looking for this recipe for a long time, the know-how was lost with my Nona and I always regretted not learning how to make it. Your technique and passion remind me of my nona, it's funny how we have similar food and traditions for Italians that migrated over here to Australia. I'm going to make this on the weekend, wish me luck :D.

      Thank you for watching. Adding strawberries is a fabulous idea. My local bakery would put a strawberry compote on top of the custard. It was delicious. 💖
