You can also sharpen a convex egde on a waterstone, by rock/change position of the blade on the stone and that way maintain the convex edge. - Like " vitorious " show on his side. I have both musepad / sandpaper, strop and waterstone. After use, a few stroke on the strop is is enough to sustain a sharp edge. - Great video thou. Good explanation.
the f1 is infact has a micro v edge from the factory i hate it so i sharpened it on a 5000 grit stone to blend the mico v edge with the convex grind trying keeping the same factory angle but removing the micro sholder by useing a shallow angle then i use green compound on the strop to refine the edge the key to sharpening a convex grind is to remove metal from behind the edge first to keep a shallow convex edge then to raise the angle to just touch the edge if you draw a line on the edge of the knife with a marker pen then you can see were you are taking the metal from. do not use a mouse mat with sand paper this will result in a steep convex grind and a dull knife the f1 has a tough edge from the factory geometry and is not as sharp as many scandi grinds so why make it steep? fine sand paper is good on a flat serface
