Raagi mudde is a staple food especially in villages of South Karnataka. The taste depends on sambhar or curry. It takes some time for your palette to get used to the taste. In north Karnataka it's made out of sorghum (Jowar) called Jolad mudde. But the staple food in northern Karnataka is jolad rotti.
The concept of not serving sambhar with dosa is only more prevalent among the south Bangalore restaurants or the older ones that you have visited but all darshinis in the city serve sambhar along with masala dosa.

Ghee is actually good source of "Good" cholesterol without cholesterol your body can't heal and do some important metabolic functions, the reason for adding that much to roast it is to provide heat in the body, now a days climate has changed but earlier this was very chilled place, like 15/16°C during the summers was the highest so they needed that kind of heat and TBH locals either eat it ghee or plain
