how did you know what sign convention is to be used in v3 and v1 in nodal?

Current flows from positive potential to negative potential, and since potential generated across 20 ohms resistor is given therefore equation 5 is written as V1 = VC - VB.
Incase potential is not given, then we may assume any direction. At the end if we get negative value of the potential, then simply we can change the sign.
Similarly we can assume any direction for the current. At the end if we get negative value of the current, then simply we can change the direction.
Only point to be noted that assumed current direction and assumed potential should follow the statement " Current flows from positive potential to negative potential"
