Wow! Zacusca made by a true artisan. I was looking for recipes for my end of eggplant harvest. I don't have this many, but am going to try this scaled down. It looks so delicious! 🍅🍆🍄😛
I use it with rice or as sauce for pasta or gnocchi, it is divine! If you want to try it as lasagne filling, use boiled pasta and bake it only till the crust is done. I hope you can buy it somewhere online or - why not - try and make it yourself, it is not so difficult :))))

Toate superbune si traditionale ! Dar de ce nu scriem si româneşte ? Promovăm traditiile românesti in limba si scrierea română, nu ?.. Scriu ca abonat al canalului. Va multumesc si va urmaresc din Spania si va impart cu altii
i make this at home once in a while. its not hard, but my apartment stinks from all the roasting since i dont have good ventilation. i dont boil my onions or drain my peppers, thats where the flavor and nutrition is, only the eggplant because the liquid is very acidic and has an unpleasant flavor. i boil my bottles beforehand to sterilize them, and never boil them after. i then add a tablespoon of oil at the top after filling, because it creates a barrier that bacteria cannot penetrate. i just cover my bottles overnight, and hear them pop when the heat dissipates and creates a vacuum seal. i use my used up pasta sauce jars and they work fine.
My grandfather made this...he was one of Romania's best engineers, but he ate this stuff. He didnt put eggplant, instead he put carrots. Plus...lots of other changes. He would put it in the jars and it turned to rock. He would add water and boil it. It was vile. I mean...just vile, but he would eat that stuff. Moral of the story, every man has a disgusting dish they make and will eat for years on end. I also have a thing I used to eat for decades that nobody else would tolerate. Still, it brings back memories, good ones.

dont use metal on eggplant..chop them with wooden spoon/paletts..
