    Emilie, your recipe is fantastic and foolproof! I had never pasta before and now I’m making fancy stuff like raviolo al uovo and lasagna! The pasta texture is delicate to eat yet supple to work with. I use organic all purpose flour. Next I’ll try it with Tipo 00.
    PS. Sourdough pasta seems good for diabetics too!

      Oh yes! Try it. In fact, the next time you make bread dough, if you have any leftover starter, just dive in and make the pasta dough. Chill overnight and make for dinner the next day. I do this all the time...

    I shall try this recipe. I told the kids until I made use of their gifts of past I wouldn't expect more gifts from them. Pasta maker and drying rack were the latest and they haven't sent me another gift. Can we guess why?

      Great question. And thank you so much! :) Here's how I see it: some fermentation is better than none, and it's important to remember that digestive benefits will vary across the board depending on your own personal bio rhythm. For example, a 2 hr. ferment might be sufficient for me, whereas a longer ferment might be needed for you. Play around and experiment. Make changes as needed. Hope this helps!

    I have your Sourdough Made Simple book. I have made the baguette recipe from that book. After many trial and errors bread flour made the difference for me. Success!

    I usually make a huge batch of pasta and air dry it for a day or so, depending on humidity, and store it airtight for up to a month in the pantry. Or give it away to friends. Is that an option with sourdough pasta? Have you tried drying it completely and storing it?
