HOW TO MAKE AYAMASE A.K.A DESIGNER STEW! [RECIPE]

  • You asked so I delivered! For all of my Insta and Snapchat Family who were after the recipe, here is how I make my Ayamase stew! As usual if you try this recipe let your girl know ☺️ x
    AYAMASE RECIPE
    5 Green peppers
    1 Brown onion
    2 Scotch bonnet peppers
    1 cup Palm oil
    1 tbsp Iru (Locust beans)
    1 sliced/diced red onion
    Assorted meats
    4 small individual chicken knorr cubes or 2 of the double pack
    1-2 tsp crayfish or ½ crayfish seasoning cube

    Wow that was such a quick and simple tutorial. Many ayamashe tutorials are so long! I feel more confident with making this dish. And you should upload more Nigerian food tutorials!

    Heyyy. Thank you for this amazing and easy to follow recipe I just have one question. Can I substitute the palm oil for vegetable or canola oil as it is hard to get my hands on palm oil where I am

    OMW a viedo that shows you everything in under 5 minutes, who paid attention in University when it came to presentation then? Excellent, Ayamase, looks as good as Aso rock in London Dalston that probably does the best ever.

    By the way, Palm oil’s one of the healthiest Nigerian oils apparently. Palm kernel oil’s the one you need to eat in moderation but red palm oil’s very healthy. :-)

      🤗 I ought mine from an Asian butchers who sell African foods, they had them in the freezer section. African food stores may have them too xxx

    How do you reduce the raw taste of the palm oil?

      I heat it for a few minutes to bleach it, and the raw taste isn’t as strong x

      Anon Collins bleach the oil very well,I mean leaving it on fire till it changes from the Normal colour to a bleached colour

      I'm not a fan of bleaching cos of health concerns. I've recently discovered a brand of palm oil that is consistently good quality (no aweful taste/aftertaste) and I enjoy the palm oil flavor in whatever I cook it with.
      I would still bleach if I had to make 'ewa agoyin' though cos I don't make it often and bleaching gives it that authentic favour.

    Is there an alternative to bleaching?? I tried it once and let’s just say it’s a miracle none of our neighbors called the fire department 🙈

      Carrie_Jo haha bless you! If you do it for just a few minutes it shouldn’t create smoke. The heat may have been too high or it was left to bleach for too long. Otherwise you can skip it all together, it will still taste delicious and isn’t an absolutely mandatory step x

      Cover the pot while bleaching, don't open until done, let it cool down completely before opening the lid.

      Maisha Addai scotch bonnets are habanero peppers. This is the pepper of choice for Jamaicans too

      @@nosaerhabor7564 no probs. Basically ayamase is ofada stew. The wife of mase (ayamase) had a food shop in ikenne ogun state. She made her own version of ofada stew with green peppers 🫑. To give her credit for her own style of ofada stew, customers called it ayamase stew.
